Ban Pho is a small district, with a population of less than 3000, about 1 ½ hours east of Bangkok. Originally made as a house curry, it quickly became popular with neighbours and then the local Thai restaurant. It is now sold in several restaurants in Bangkok and now by Gung’s Gourmet Thai in Australia. The dominant flavours are fresh galangal, fresh turmeric & peppercorns so it is quite different. I have stayed true to the recipe with the only innovation being using Schottlanders (Gerringong) Wagyu hanger. Gung:)

Are you vegan or vegetarian? When I made my local farm vegetable curry in the Southern Highlands recently, it was covered by the ABC, 2ST & The Fold Media. They loved the concept of me handpicking the best vegetables from local farms and turning them into a handmade vegetable curry that has probably never been made commercially in Australia before.

We are travelling from Southern Thailand up the top to Northern Thailand around Chiang Mai near Myanmar this week. If you recently watched MasterChef, Nat made a few Thai dishes that I thought you might like to try! One dish was Gaeng Hung Lay. A dish for special occasions, it is a Thai dish with Indian influences. Nat made the dish with lamb shanks but it is traditionally made with pork belly or ribs. Thanks, Gung:)

A truly authentic Pad Prik Khing curry stir fry only has 5 ingredients. In this case, the star of the show is 100% full pedigree Wagyu beef brisket from Schottlanders Wagyu Farm at Gerringong. The 4 supporting acts are makrut lime leaves, snake beans, fresh red chilli & carrot. Although this dish stays true to its authenticity, I have added a dash of innovation, by making the dish in the texture of the Malaysian dish, beef rendang. Gung:)

I LOVE making handmade (by me) mortar & pestle curries which are unlikely to have ever been made outside of Thailand before. This Southern curry you will find around the areas Phuket, Krabi & Phang Nga. I have picked the eyes out of 10 different recipes and combined them into 1 best of the best recipe. Gung:)

My last market for a few weeks! I was able to source some beautiful fresh Australian barramundi today. I am going to make a kaeng kua curry, which is in between a panang & a red curry. I am going to infuse the curry with fresh kaffir lime fruit (rare & expensive) juice to compliment the kaffir lime leaves in the curry. Add some water spinach & a little bit of fresh red chilli, and I think this is the nicest tasting curry sauce that I make. Gung:)

When Moonacres Farm (Fitzroy Falls) meets Gung's Gourmet Thai!!! Phil & I had a great time early this morning, picking an amazing selection of organic vegetables, to go in my ever so popular local farm vegetable curry for Mittagong Markets on Saturday 18/05. Exactly the same as a world class vineyard, it is all in the soil. Although starting with such pristine Fitzroy Falls soil was an advantage, Phil goes to extraordinary lengths to constantly improve the quality of the soil. Treating soil with such love, enables the vegetables to reach a level where their maximum flavour level can be revealed. I find that a kaeng kua curry is a great match for outstanding vegetables, because it naturally brings out the flavour of each vegetable.

Slow cooking the various cuts of pork is very popular in Thailand. However, you very rarely see these dishes in suburban Thai restaurants in Australia, because it is not practical for them to do it. This dish is a great example of what people eat in Thailand. Thanks, Gung:)
