When a regular asked me if I could please make him the ultimate lamb Massaman curry, it was as easy as using Cowra lamb shoulder, famous Robertson potatoes & Produce from Orange (Yuri) onions. That and making it fresh of course! Cowra + Robertson + Orange = a local farm to plate lamb Massaman curry.

So, why have beef cheeks become so fashionable? I guess melt in your mouth, luxurious & indulgent best describes them. When they are sourced from Parwan Valley, where hand selected livestock is free to roam and feed on 4000 acres of rich red volcanic soil pastures, they become something very special. This sticky & tasty beef cheek dish, is essentially a high quality Italian dish, with Thai flavours. Yet another of my own creations/inventions, this is a dish not to be missed! Gung:)

This dish is all about the magnificence that is Schottlanders Wagyu Farm at Gerringong. For this dish I have selected brisket which is slow cooked in aromatics. The Wagyu is then tossed in a fresh ginger chilli caramel sauce and topped with shredded Makrut leaves & coriander. Gung:)

They are just all fresh fish with just fresh lemongrass puree (which I make myself), Thai basil, kaffir lime leaves, red curry paste, 1 local farm egg per kilo to bind them & a few different Thai sauces for flavour. I have a great love for the fresh seafood restaurants in Thailand, where you choose your own seafood & select how you would like it to be cooked. That inspired me to create/invent this fish dish. I bought 2 massive whole fresh Australian saltwater barramundis today from Shellharbour Square Fish Market. Fish bought, cooked, sold & eaten within 24 hours. The dish is a tamarind sauce that I have topped with a garden of Thai herbs. Sensationally fresh fish + beautiful fresh Thai herbs = a real taste of Thailand! Gung:)

Ban Pho is a small district, with a population of less than 3000, about 1 ½ hours east of Bangkok. Originally made as a house curry, it quickly became popular with neighbours and then the local Thai restaurant. It is now sold in several restaurants in Bangkok and now by Gung’s Gourmet Thai in Australia. The dominant flavours are fresh galangal, fresh turmeric & peppercorns so it is quite different. I have stayed true to the recipe with the only innovation being using Schottlanders (Gerringong) Wagyu hanger. Gung:)
