Honey Lime salmon n Avocado Rice!

Ingredients rice:
1 cup sushi rice
1 1/4 cups water
1 tablespoon rice vinegar
1 teaspoon sugar
1/2 teaspoon salt

For the salmon:

1kg salmon, cut into 1-inch cubes
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons lime juice
1 tablespoon olive oil
1 clove garlic, minced
1/2 teaspoon chilli flakes (optional)
For the Avocado:

1 ripe avocado, sliced

Instructions:
Cook the Rice: Rinse the rice until the water runs clear. Combine rice and water in a rice cooker or a pot. Cook according to package instructions. Once cooked, add rice vinegar, sugar, and salt. Fluff with a fork.
Marinate the salmon: In a bowl, combine soy sauce, honey, lime juice, olive oil, garlic, and red chilli flakes. Add the salmon and marinate for at least 30 minutes.
Cook the salmon: Heat a pan over medium-high heat. Add the marinated salmon and cook to your liking.
Divide the cooked rice into bowls. Top with the cooked salmon and sliced avocado.

A lot of you don’t know this about me but I thought I would share in honor of a great man we have just lost.
10 years ago I set off on an adventure to Nepal. It turned out to be one of my most life changing experiences. Long story short, I met some incredible people that needed my help to live. I met an amazing man on this journey called Michael McGowan who pushed me to my limits and proved to me that anything is possible if we dream big and work hard. We volunteered our time for years and helped hundreds of disabled Nepalese kids and adults, created a charity that raised money for these people with the help of many others, renovated a disabled home, raised much needed funds and awareness for the centre which is still standing to this day with all the old residents in it and a lot more.
Life is a funny old thing. One minute we are here changing the world and the next we are gone. Live your best life, we only get one chance.

Rest in eternal peace Michael. You were a hero and a lifesaver 💕 love you forever.💕

🫣Brazil update. 4 weeks at the beach,another 4 to go! 🫣I wasn’t going to upload this video because it sounds like I’m moaning a lot… 😂But I can’t be bothered making another video it’s late… 🫣In between all this Eddy and I did have a fantastic trip to Rio alone for carnival! Forgot to throw that story in! 😂 🥲I am missing all my home comforts more than I thought I would..my own bed, cafes, my house, my social life, friends, family, the quiet of Australia, it’s so noisy here and ROUTINE- routine is the biggest change for me! I just can’t get into a routine being stuck at home all day until the cool afternoons come! I feel like I’ve been put through the washing machine and spat out in another country 😂 ❓If you have ever done a long trip away from your home country with kids, what did you do to make life feel a bit “normal”?
