A leading environmental advocacy organisation hosted a three-day, carbon-neutral, vegetarian-focused conference at Sydney Masonic Centre. The event aimed to minimise its carbon footprint and deliver a diverse and appealing vegetarian menu.
Key challenges included creating a varied vegetarian menu that catered to all attendees and aligning the venue’s operations with sustainability goals.

The SMC team crafted daily rotating menus with global cuisines, fresh salads, and indulgent desserts, using locally sourced ingredients to minimise environmental impact.

The conference was highly successful, with over 160 attendees praising the exceptional vegetarian cuisine and the overall commitment to sustainability. SMC’s collaboration with the client ensured the event’s goals were met, showcasing SMC’s ability to host sustainable events with high-quality vegetarian cuisine.

We were honoured that the Surgical Robotics + Innovation Summit (SRIS) returned to SMC for the second year since 2022, hosted by the Sydney Local Health District’s Institute of Academic Surgery at Royal Prince Alfred Hospital.
