Exciting news! Today I officially signed a lease and picked up the keys to my very own commercial kitchen.
Pumpakina is now based in Padstow, Sydney!

My little side business has grown over the past 6 years and is now ready for the next stage of growth.

A huge thank you to my family, friends and clients for the ongoing support. I love the beautiful flowers I received from my amazing husband and children.

Here’s to the next chapter and I can’t wait to share what’s in store!

The perfect, most comforting meal on a cold winter’s night.

Featuring slow cooked beef stew in red wine served with roasted brussel sprouts on a bed of sweet potato mash.

This wonderful meal was made using the freshest ingredients from the winter mystery box challenge from - thank you Wholefarms! Such beautiful produce as always.

Condensed milk in a nice warm water bath about to be transformed into dulce de leche.

Dulce de leche:

2 x cans condensed milk
1 tsp sea salt to finish

Pour condensed milk into an oven safe dish.

Place the dish into a larger oven safe pan.

Fill the pan with hot water until halfway up the sides of the dish.

Cover the pan with aluminium foil.

Bake at 220c for 1 & 3/4 hours until condensed milk is amber brown in colour (add extra hot water if needed whilst cooking).

Add salt to the caramel and stir till dissolved.

Pour caramel in a sterilised jar.
Let it sit at room temp for an hour and then refrigerate... or eat it with a spoon straight from the jar.
