Arigato our new canape creation - shiro shoyo soaked sh*take mushroom sprinkled with shallots and umeboshi sesame. Not sure why we call it the tongue twister?! (Did we mention the parsnip bonito and chestnut paste?)

We start with nonie's fabulous charcoal bread. We layer with ricotta, avocado, crispy spring onion curls, saffron, passionfruit olive oil pearls and edible violas. It’s more of an ongoing adventure than an open sandwich.
