Kingfish Peach Crudo
The ultimate summer snack, using the best Ondine flat peach variety, the most versatile peach on the market!
serves 2-4
500g sashimi grade kingfish
1/4c cold pressed peach juice (2 ondine flat peaches, ripe, hand pressed as I did it!)
1 lime, juice only
1 whole jalepeno chilli, seeds removed, finely diced
1 tbls ginger,finely diced
1 tbls mirin
1 tbls soy

Slice the kingfish paper this, arrange on serving platter

Mix the remaining ingredients in a small jar, gently shake

Spoon generously over the kingfish and serve immediately with forks to eat directly from serving platter!

The ultimate summer starter to be served for as smaller crowd as possible!

Celebrating these beautiful Ondine flat peaches, perfect served crispy but used here ripe and juicy, the quintessential Australian summer snack.
