YES!!
After 6 long years, we are just on our way to Brazil to reunite with our loved ones and also nurture our body and soul with our food, our culture and all the amazing things Brazil has to offer.
And of course, we can't wait to share with you everything, amigo đ
KeenTown in Sydney is on holidays, however KeenTown on Instagram is ON đ
And with that, you will notice a few changes...our stories will be in Portuguese for this period and our feed we will try our best to do in both languages, Portuguese and English.

"What happened to KeenTown?"
"Where have you guys been?"
These are a couple of questions we have been asked in the past few days and we are here to say that we are GREAT and KeenTown is busier than ever.
We have just decided to take a well-deserved break from social media and give a bit more attention to Cris and Mu as individuals.
You know how much we have been actively creating online content for you in the past years and that requires a LOT from us. And as much we love doing that, we just felt we needed to readjust the direction we were going and to do that we needed to stop, breathe and relax for a while.
But of course, we MISS so much our amigos here that always support us and our work and we have to say we can't wait to be back and bring the best recipes, tips, culture and more for you very soon.
In the meanwhile check what we have been up to since 2023 started:
đđđœââïž We have started running 3x a week
đș Mu has started a 1-year Professional Brewer Course at TAFE
đ» We have been visiting new breweries
đïž Enjoying as many beach days as we can
â Coffee meetings to braintorm about KeenTown's exciting projects.
Great start to the year we are having combined with many Personal Chef sessions and personalised catering gigs.

What an intense year 2022 was!
Lots of work, good and challenging moments, new projects, hard decisionsâŠ

Xmas tip of the week: gift wrapping.
What about giving a second life to gift wrapping? Cotton bags can be a great alternative when packing a gift, as they can be reused for other purposes after. For this one, we simply got a spring of rosemary from our garden and added a small bauble from a past Christmas.
Other sustainable tips for packaging:
đ Use paper bags that can be used again.
đ Use boxes that can be reused to store things.
đ Wrap your gifts in tea towels.

For many Brazilians, that's the taste of Christmas at home. Delicious pies and desserts are made with this sweet and sour fruit.
In our jam, we combine pineapple, apples, cinnamon and raw sugar, and that's it. Perfect for adding that special touch to your pavlova.

'Deleite' = Delight
Using just 5 ingredients, our Brazilian style dulce de leche or as we call it in Brazil: 'doce de leite', it's a delight inside a jar.
Made by us from scratch, this very versatile delicacy can match with sweet and savoury ingredients, such as fruits and cheeses, and it's perfect for enhancing any dessert or can be eaten even by itself.
For our rabanada, we mixed it with some cream to make the perfect sauce. In our opinion, it's better than chocolate!

Xmas Recipe Alert: Grilled King Prawns with Cocktail Sauce đŠđâ
â
Xmas in Australia = delicious prawns.â
â
Thereâs nothing more delicious than juicy prawns with cocktail sauce, and with this straightforward and quick recipe, you will leave your guestâs mouths watering.â
â
Ingredients:â
Raw king prawns (or any other type of prawn of your preference)â
KeenTown Lemon and Rosemary Saltâ
Olive oilâ
Butterâ
â
Cocktail sauceâ
Japanese mayonnaiseâ
KeenTown Roasted Tomato and Onion Chutneyâ
KeenTown Chilli Sauceâ
â
Method:â
1. There are no rules about quantities for this recipe, as you will follow your preferences and taste. The number of prawns per guest will depend on the number and variety of dishes you serve, but we recommend 2 to 3 prawns per person.â
2. First, you will butterfly the prawns to devein them; however, donât remove the head as it will look extra beautiful on the table. â
3. Sprinkle some of our lemon and rosemary salt over the prawns and add a bit of butter.â
4. Grill them in a scorching skillet (we used cast iron to keep the heat) using a bit of olive oil.â
5. For the cocktail sauce, mix the mayonnaise with the chutney and the chilli sauce; start with a small amount, then taste and add more of both, depending on your taste.â
6. Serve them hot or cold; they are delicious both ways.â

Have you ever wondered what is the meaning of our logo?
As we have a Brazilian Soul and an Australian Heart we wanted to express both countries in our identity.
The xylography style letters are inspired by the art very popular in the Northeast of Brazil. The shed and the âHills Hoistâ lines in it come from the Australian backyards and the yellow represents our connection.
Our name originates from the Brazilian Portuguese word for backyard, âQuintalâ (Pronounced the way we say our name). And as we are so KEEN to do the difference, we couldnât play better with the words đ

Wanna learn the secret of Mu's Caipirinha?
Here is the recipe:
Lemon Lime Caipirinha đ
You will need:
Cocktail shaker
Ingredients
3/4 lime (sliced)
1 teaspoon rapadura sugar
15ml sugar syrup (1 part sugar for 1 parte water boiled as a syrup)
15ml lemon juice
40ml of cachaça
80g to 100g of ice
Method:
1. In the cocktail shake r macerate the sugar with the lime but be careful to not macerate too much the skin.
2. Add the ice and the other ingredients and shake shake shake.
3. Serve in a glass and enjoy with a delicious Feijoada

KeenTown was created from the idea to serve meaningful meals in our backyard.
At the time we lived in a ground floor one bedroom unit and dreamed to move to a place where our "Quintal" would be the most important place in the house.
The project got out of the paper and it's beautiful to see all the delicious meals we have served in our table till now. đ

KeenTown Project was created with the intention to help people take care of our 2 homes: Our Body and Our Planet.
Cris is a creative, enthusiastic chef with 12+ years of experience working in the hospitality industry. Member of Slow Food Sydney Committee, passionate about the farm to table concept, she really believes food can help us change everything.
Mu is a BBQ lover (Beer, Barbecue and âQuintalâ - The Brazilian word for Backyard, which is where the name of our project originates). His passion for Beer combined with his love for the nature made him KeenTownâs official Beer Brewer and Composting Master.
Together they are building KeenTown Project, a business consisting of Meaningful Meals, Sustainability and Education which together connect people.
Meaningful Meals - Private meals where we design a menu prepared exclusively to the group. As members of âSlow Foodâ we really care about what we serve. Using Brazilian cooking traditions plus local ingredients to nourish body and soul.
Sustainability - Researching ways to be increasingly sustainable in everyday life, specifically surrounding cooking. Buying mostly organic produce from local farmers and bulk shops, pursuing a waste free lifestyle and composting food scraps.
Education - Promoting and spreading relevant ideas through talks, classes and workshops to educate and engage the community, as to âHow to save the planet through foodâ, where we discuss the current food system and how as consumers are the power for change.
