Leftover Christmas Ham & Mushroom Baked Crêpes

Crêpe Ingredients
3 large eggs
1 ¾ cup (400 ml) milk
1 ½ cups plain flour
100 gm butter, melted, cooled
Extra butter or oil (to grease the pan when cooking crêpes)

Filling ingredients
2 tablespoons olive oil
500 gm mushrooms, diced
1 teaspoon thyme, finely chopped
300 gm leftover Christmas ham, cubed

Sauce ingredients
2 tablespoons butter
2 tablespoons plain flour
1 ¼ cups (300 ml) milk, warmed
150 gm cheddar or Swiss cheese, grated
salt and pepper to taste
6 tablespoons grated Parmesan cheese

Method
• Blend the eggs, milk and flour with a stick blender and then add in the butter and blend to combine.
• Let crepe mixture stand while you make the filling
• Heat oil for filling in a large frying pan over medium-high heat and add the mushrooms, frying until the liquid evaporates and the mushrooms are lightly browned.
• Stir in the thyme and cubed ham, remove from the heat and set aside while you cook the crepes.
• Heat a crêpe pan or non-stick frying pan over medium-high heat and grease with clarified butter (or oil).
• Measure 1/4 cup of batter into the pan and tilt the pan to evenly spread the batter.
• Cook until the edges of the crêpe look papery and brown, about 20 to 30 seconds.
• Flip the crêpe and cook on the second side until browned. Transfer to a plate.
• Repeat, greasing the pan as necessary, until all the batter has been used.
• Preheat the oven to 180°C and grease a baking dish.
• In a medium saucepan, melt the butter, whisk in the flour and cook for about 30 seconds. Whisk in the warm milk.
• Cook, stirring frequently, until the mixture bubbles and thickens. Add the cheddar or Swiss cheese and whisk until melted and smooth.
• One crêpe at a time, spoon 1-2 tablespoons of filling a line down the centre, add some ham and mushrooms, roll the crêpe into a cylinder and place in the prepared baking dish.
• Repeat until all the crêpes have been filled and cover them with remaining sauce and Parmesan cheese.
• Bake for about 30 mins or until the topping is browned and bubbling.
• Serve crêpes hot with salad.

Deck the Halls with Sweet Treats!

Cookies in a Jar is the ultimate last minute Christmas gift you can give to anyone, especially friends and neighbours to drop by with unexpected gifts.

Make up a few of these jars to keep under the tree and don’t forget to attach a copy of the baking instructions too.

Simply layer the ingredients in a jar, add a cute ribbon and gift tag, and you're done!

Ingredients in jar
1⅔ cups SR flour
1 x 165g packet of M&M's Red & Green Christmas OR 1 x 200gm packet dark chocolate chips
⅓ cup light brown sugar, firmly packed
½ cup granulated sugar
750 gm - 1 litre Mason jar

Instructions
1. Carefully layer ingredients in a clean glass jar, alternating different coloured layers
2. Attach a gift tag with instructions:

• To make cookies, preheat your oven to 190℃ or 170℃ fan forced).
• Line 2 baking trays with baking paper.
• Mix jar ingredients with 125 gm melted butter, 1 large egg and 2 tsp vanilla essence
• Refrigerate mixture for 30 minutes.
• Measure heaped tablespoons of dough and roll into balls and place on trays, 5cm apart.
• Bake for 8-10 minutes or until light golden.
• Rest 2 minutes then transfer to a cooling rack.

Just brilliant as a standalone recipe or served as a side dish with any protein, this is a brilliant recipe to enjoy, particularly when asparagus is in season.

Couscous and Asparagus Salad

Ingredients

1 ½ cups couscous
2 cups hot vegetable stock
2 tbsp butter or olive oil
2 tbsp olive oil
1- 2 bunches of asparagus, sliced into 6 mm slices
1 cup frozen peas
3 radishes, thinly sliced
Zest and juice of one lemon
2 tbsp chopped chives
2 tbsp chopped parsley
2 tbsp chopped mint

Method

-Put couscous in a bowl and cover with vegetable stock and butter or olive oil.
Cover, and let stand for 10 minutes.
-Heat a frying pan over medium heat, add olive oil and pan fry asparagus until lightly browned and tender. Set aside.
-Boil peas in a saucepan of boiling water or cook in a microwave- proof container in a microwave for 3-4 minutes or until cooked.
-Drain peas and refresh in cold water.
-Once couscous is ready, fluff it with a fork, and stir in asparagus, peas, radishes, lemon juice and zest, chives, parsley and mint.
-Season with salt and pepper and serve warm or cold.

👻🎃 Halloween is tomorrow, and we have the perfect spooky treat for your party: Witch's Finger Cookies! 🧙‍♀️🍪

These eerie cookies are a crowd-pleaser and super easy to make. With a few simple ingredients, you can whip up these wickedly delicious fingers that look almost too real! 😱

Your guests will be delighted and horrified at the same time! 🎃👻

Makes 50 - 50 biscuits

Ingredients
250 gm butter, softened
1 cup icing sugar
1 large egg
1 teaspoon vanilla essence
2 ⅔ cups SR flour
1 cup whole raw almonds (skin on)
1 cup strawberry jam

Method
• Preheat oven to 165 degrees celsius
• Cream together butter, icing sugar, egg and vanilla essence until smooth.
• Add flour and refrigerate the dough for 30 minutes.
• Scoop 1 teaspoon at a time onto a piece of baking paper and use the waxed paper to roll the dough into a thin finger-shaped cookie.
• Press one almond into one end of each cookie to give the appearance of a long fingernail.
• Squeeze cookie near the tip and again near the centre of each to give the impression of knuckles. You can also cut into the dough with a sharp knife at the same points to help give a more finger-like appearance.
• Bake on a baking tray lined with baking paper until golden, approximately 20 to 25 minutes, then let biscuits cool
• Serve finger biscuits dipped into strawberry jam to give the effect of blood for a creepy, oozing effect! 🍓

Love baking with berries? This is the recipe you’ve been looking for!

And what better time to make this spring recipe than when the spring berries are in season.

Berry Crumble Slice is ideal as a lunchbox treat, afternoon tea indulgence or even as a dessert. You can use a mixture of strawberries, blueberries, raspberries, blackberries or whatever berries you have on hand.

Ingredients

1 cup sugar
3 cups all purpose flour
Zest of 1 small lemon
1 cup (250 gm) cold unsalted butter, cut into cubes
1 large egg
½ tsp pure vanilla essence

Filling ingredients

4- 5 cups chopped fresh berries
½ cup sugar
4 tsp cornflour
juice of 1 lemon

Method
1. Preheat the oven to 190°C (170°C fan forced oven).
2. Line a slice pan with baking paper.
3. Use a hand mixer or stand mixer to slowly combine sugar, flour, lemon zest, butter, egg, and vanilla until mixture is crumbly.
4 Press a little over half the mixture evenly into the bottom of the prepared pan using your hand.

Filling method:
1. Gently stir together all ingredients until well combined.
2. Spread the filling over the crust, then crumble the remaining dough over the top of the berries.
3. Bake for approximately 40-45 minutes, until the top is light golden brown and the fruit is bubbling.
4. Transfer pan to a wire rack to cool completely and then refrigerate before cutting.
