We prefer to create the menu WITH you, the client. We have lots of ideas and we love being creative – we cook a wide variety of cuisines and believe anything is possible.
However; if you’d like some menu ideas, you can take a look at our sample menus to show you the kind of foods possible.
Our Rose Menu is our most extensive set menu and includes a wide variety of hot and cold foods to suit every taste.

At Catering By Design we have years of experience catering for events on the beach, on islands, on boats and in the park – all without access to a kitchen! Because our catering trailer is a mobile kitchen and is fitted out with all the kitchen equipment we need, we can easily cater for large quantities efficiently and effectively.
Whatever equipment you need for your outdoor event we can supply – chairs, tables, glassware, plates, servingware, decorations, lighting, sound system…and of course all of the delicious food and drinks and the staff to serve it all.

Celebrate the Australia Day long weekend with a sweet twist on a classic favorite – Lamington Ice Creams!
These irresistible frozen treats are the perfect way to cool off and indulge this public holiday. Combining creamy vanilla ice cream, fruity jam, rich chocolate, and a sprinkle of desiccated coconut, they’re a refreshing spin on the traditional lamington cake recipe we all love.
Best of all, the recipe uses store bought ice-cream so they are quick and easy to make ahead of time, and they’ll be ready to impress your family and friends at your Australia Day BBQ or picnic!
Ingredients
• 1 litre vanilla ice cream
• 100g strawberry or raspberry jam
• 250g dark choc chips
• 220g milk choc chips
• 250g desiccated coconut
Instructions
1. Line a baking tray with baking paper.
2. Remove the ice cream from the freezer and let it soften for 10 minutes.
3. Spread half of the ice cream onto the prepared tray. Add a layer of jam, then spread the remaining ice cream on top.
4. Insert popsicle sticks evenly into the ice cream and freeze overnight.
5. Once frozen, remove from the freezer and let stand for 2 minutes. Cut the ice cream into squares, ensuring each stick is centered in a square. Carefully place the squares on baking paper and return to the freezer for at least 2 hours.
6. Melt the dark and milk chocolate together. Dip each ice cream square into the melted chocolate, then roll it in desiccated coconut.
7. Immediately return the pops to the freezer to set. Serve frozen and enjoy!

Leftover Christmas Ham & Mushroom Baked Crêpes
Crêpe Ingredients
3 large eggs
1 ¾ cup (400 ml) milk
1 ½ cups plain flour
100 gm butter, melted, cooled
Extra butter or oil (to grease the pan when cooking crêpes)
Sauce ingredients
2 tablespoons butter
2 tablespoons plain flour
1 ¼ cups (300 ml) milk, warmed
150 gm cheddar or Swiss cheese, grated
salt and pepper to taste
6 tablespoons grated Parmesan cheese
Method
• Blend the eggs, milk and flour with a stick blender and then add in the butter and blend to combine.
• Let crepe mixture stand while you make the filling
• Heat oil for filling in a large frying pan over medium-high heat and add the mushrooms, frying until the liquid evaporates and the mushrooms are lightly browned.
• Stir in the thyme and cubed ham, remove from the heat and set aside while you cook the crepes.
• Heat a crêpe pan or non-stick frying pan over medium-high heat and grease with clarified butter (or oil).
• Measure 1/4 cup of batter into the pan and tilt the pan to evenly spread the batter.
• Cook until the edges of the crêpe look papery and brown, about 20 to 30 seconds.
• Flip the crêpe and cook on the second side until browned. Transfer to a plate.
• Repeat, greasing the pan as necessary, until all the batter has been used.
• Preheat the oven to 180°C and grease a baking dish.
• In a medium saucepan, melt the butter, whisk in the flour and cook for about 30 seconds. Whisk in the warm milk.
• Cook, stirring frequently, until the mixture bubbles and thickens. Add the cheddar or Swiss cheese and whisk until melted and smooth.
• One crêpe at a time, spoon 1-2 tablespoons of filling a line down the centre, add some ham and mushrooms, roll the crêpe into a cylinder and place in the prepared baking dish.
• Repeat until all the crêpes have been filled and cover them with remaining sauce and Parmesan cheese.
• Bake for about 30 mins or until the topping is browned and bubbling.
• Serve crêpes hot with salad.

Simply layer the ingredients in a jar, add a cute ribbon and gift tag, and you're done!
Ingredients in jar
1⅔ cups SR flour
1 x 165g packet of M&M's Red & Green Christmas OR 1 x 200gm packet dark chocolate chips
⅓ cup light brown sugar, firmly packed
½ cup granulated sugar
750 gm - 1 litre Mason jar
Instructions
1. Carefully layer ingredients in a clean glass jar, alternating different coloured layers
2. Attach a gift tag with instructions:
• To make cookies, preheat your oven to 190℃ or 170℃ fan forced).
• Line 2 baking trays with baking paper.
• Mix jar ingredients with 125 gm melted butter, 1 large egg and 2 tsp vanilla essence
• Refrigerate mixture for 30 minutes.
• Measure heaped tablespoons of dough and roll into balls and place on trays, 5cm apart.
• Bake for 8-10 minutes or until light golden.
• Rest 2 minutes then transfer to a cooling rack.

Just brilliant as a standalone recipe or served as a side dish with any protein, this is a brilliant recipe to enjoy, particularly when asparagus is in season.
Couscous and Asparagus Salad
Ingredients
1 ½ cups couscous
2 cups hot vegetable stock
2 tbsp butter or olive oil
2 tbsp olive oil
1- 2 bunches of asparagus, sliced into 6 mm slices
1 cup frozen peas
3 radishes, thinly sliced
Zest and juice of one lemon
2 tbsp chopped chives
2 tbsp chopped parsley
2 tbsp chopped mint
Method
-Put couscous in a bowl and cover with vegetable stock and butter or olive oil.
Cover, and let stand for 10 minutes.
-Heat a frying pan over medium heat, add olive oil and pan fry asparagus until lightly browned and tender. Set aside.
-Boil peas in a saucepan of boiling water or cook in a microwave- proof container in a microwave for 3-4 minutes or until cooked.
-Drain peas and refresh in cold water.
-Once couscous is ready, fluff it with a fork, and stir in asparagus, peas, radishes, lemon juice and zest, chives, parsley and mint.
-Season with salt and pepper and serve warm or cold.
