This simple technique will help you achieve sharp edges on any cake that you do and will really improve your skills to wow your guests at your next event.
π₯ Crumb coat your cake, then place into the fridge or freezer to chill.
π₯ Apply your top coat, also smooth the top the best you can. Resmooth the sides, then place back into the fridge or freezer to chill. (If you smooth the top first, you won't need to resmooth the sides)
π₯ For this next step, it's important that your icing has set. Otherwise, it won't work so well!!
Use a small knife to cut the excess icing off the top. Be careful not to cut too deep as you don't want to go through all the icing layers. You just want to cut enough to cut off the excess icing around the top.
π₯ Once all the excess is gone and you're happy with how it looks, apply a small amount of your buttercream to the top of the cake and smooth out using a small cake spatula. Fill any gaps where you may have cut and can see exposed cake. You can also use your cake smoother to help do the top as it covers a larger area.
π₯ Resmooth the sides gently as it's really just to smooth out around the top edge. Then, using your small cake spatula, gently scrape the excess icing towards the middle of the cake, ensuring to wipe your spatula clean after every wipe.
π₯ You can repeat this if you're not quite happy with how your edges look. Bit this is by far the best way to achieve sharp edges on buttercream cakes.
