brisket Generous sprinkling of RRB SPG. Smoked in the Stretch at 225’f for 4 hours uncovered then wrapped for 2 hours till tender. 1 hour rest on the bench. How’s that bark🔥

You can get a decent brisket for under $50. Picked up this brisket from for $40. Looked like a little gem in the bag with some nice marbling though the meat. Unfortunately the abattoir got a bit happy with there knife. Made the best of it and trimmed up nice.

5+ bone in ribeye from (I call it a cowboy cut) Tried out a new steak rub I’m blending. Getting close. I think I’m calling it. Dust My Bull Rub, or Bullock Dust. Reverse Seared oven and seared in pan.
