Here it is! The Food Trailer where Troy will provide delicious food for events, parties, weddings, corporate ... and festivals! Using his Bush Tucker knowledge, Troy creates delicious food that fills you up, is nutritious and tastes amazing.

The first outing for the trailer will be at the Gormandale Market, 21st of September from 10am onwards. Troy will be using one of his Market Menus, so come and say hi and have a try!

I have been a chef for over 25 years. I have respect for country, respect for producers, respect for good food. It is a passion I have grown up with following my late grandfather Les Bales, an amazing baker. I also grew up learning about the bush, how to survive, how to forage and how to respect it.
