Millet #3 CHOLAM

Jowar or sorghum
Is a cereal grain, a great alternative for wheat. Jowar are heat-resistant plants that can grow in dry conditions.
They are:
- Rich in fiber
- High in protein and iron
- Improves bone health
- Better hair growth
- Anticancer agent

Millet #2 Kelvaragu or Ragi or Red Teff

Ragi dosai & Ragi Idli

Finger millet comprises a vast array of key nutrients like vitamin C, vitamin E, B-complex vitamins, iron, calcium, antioxidants, proteins, fibers, sufficient calories and useful unsaturated fats.
Major health benefits

It is important to keep in mind that the best time to consume ragi is in the morning/day time, for being fiber-rich, it takes a long time to digest.

Ragi idli and ragi dosai are popular in TamilNadu.

You will practice a lot of recipes using ragi in our workshop. It is one of the difficult millet to work with. If you master the basics, you can turn Ragi into any dish with ease.

We start with an easy millet to cook with.

Samai Arisi Payasam
Samai arisi cooked in coconut milk finished with jaggery, cardamom, and nuts of your choice. Serve warm.

Little millet is one of the smallest millets but highest in nutrients.
Very good alternative if you want to replace it for white rice.

- Contains phosphorus which is great for weight loss, tissue repair, and energy production after strenuous workout.

Millets are a small, round whole grains, grown in India and other Asian and African countries.Considered an ancient grain.
They are fiber-rich, vitamin- rich, and gluten-free.

Samprita has been providing millets-based food in our catering service.

Sigappu Arisi Idiyappam.

These hand-made red rice string hoppers are loaded with fiber, vitamin B1 and B2, calcium, and iron. Nevertheless, they are rich in anti-oxidants.

Idiyappam paired with vegetable stew is one of my favorite classics of south Indian cuisine.
