Jowar or sorghum
Is a cereal grain, a great alternative for wheat. Jowar are heat-resistant plants that can grow in dry conditions.
They are:

Ragi dosai & Ragi Idli

Finger millet comprises a vast array of key nutrients like vitamin C, vitamin E, B-complex vitamins, iron, calcium, antioxidants, proteins, fibers, sufficient calories and useful unsaturated fats.

Samai Arisi Payasam
Samai arisi cooked in coconut milk finished with jaggery, cardamom, and nuts of your choice. Serve warm.

Little millet is one of the smallest millets but highest in nutrients.
Very good alternative if you want to replace it for white rice.

Sigappu Arisi Idiyappam.

These hand-made red rice string hoppers are loaded with fiber, vitamin B1 and B2, calcium, and iron. Nevertheless, they are rich in anti-oxidants.

Idiyappam paired with vegetable stew is one of my favorite classics of south Indian cuisine.

We are happy that it turned out as imagined. Call it Indian Fajitas or a wrap, whatever, they were so delicious 😋

Gluten-free sweet potato chapathi
Winter vegetables (mushrooms, witloof, carrots, capsicum & beans)
Pomegranate yogurt
Fresh spinach

Kanchipuram idli using buckwheat flakes from

Originally, these idlis are cooked in bamboo cylindrical baskets lined with mandhari leaves (Bauhinia acuminata). They were travel friendly and a very traditional recipe.

The heat from the spices pairs perfectly with the current freezing temperature.

My try on replacing rice with buckwheat flakes tasted fair, but always classics are the best.
The same batter used for preparing dosai was 👌 crispy and soft centered.

Buckwheat Dosai
Simple, healthy, gluten free dinner/breakfast
Ingredients
1 cup Buckwheat
1/2 cup Urad lentils
Water
Salt
Method
-Soak lentils and Buckwheat for atleast 6 hours or overnight
-Grind to a smooth paste and allow to ferment overnight
-Once fermented add salt and adjust consistency using water
-prepare dosai and serve with chutney

Samprita, home-cooked vegetarian take-away/catering specialized in authentic South-Indian cuisine.

Tamil Nadu, Andhra Pradesh, Karnataka and Kerala are the 4 states in southern region of India.
