We are a catering company in Nassau, The Bahamas providing exclusive celiac and gluten-free Bahamian foods with a 100% guarantee of NO cross contamination.We also cook with no diary, eggs, peanut, soy and tree nut. Along with being celiac my children and I all suffer from these food allergies. I grew up in a time where gluten and food allergies were unheard of. My entire life I struggled with food

thinking that I had a gastric problem. I began an exclusive gluten-free diet around 2016 and despite my efforts I kept getting sick. I was diagnosed a week before hurricane Dorian in 2019 with celiac. I had to alter all of my recipes and ensure that my kitchen was safe for us. Shortly after I was diagnosed my children started experiencing the same symptoms as I did. Then the food allergies started adding to the list. At this point I was between a rock and a hard place. I had already eliminated wheat and dairy from our diet, now I had to learn to cook without eggs, dairy wheat, soy, peanut, and tree nuts. At this point I was overwhelmed until my middle child Riley gave me a resounding pep talk. She said that God did not allow us to have this condition for me to give up and that my gift was not just for us but for the world. It was then that I created a vegan and celiac wholemeal bread. This was one of my many creations that was inspired by that day of me almost giving up. We want to demonstrate to the world that despite your food restrictions you can still enjoy flavorful, and familiar food again.

Introducing our very first gluten, celiac and vegan yellow cake. Oh my God I can't tell you how many failures I had. Well not according to my kids😀more for them😂 Just look at the soft texture and may I add it was yummy.👍🏼🙏💯 As always celiac and gluten-free and made in a safe celiac environment with no cross contamination. 🇧🇸

Who says that you have to follow traditional recipes and spend a ton of money buying ingredients. I bought two bags of potatoes from Discount Distributors for $8 and made a vegan, gluten-free loaded bake potato with vegan cheese, chickpeas, and spinach. With a side of healthy coleslaw made with a simple vinaigrette. By the way all of these ingredients are a household staple in our home😀 As always celiac approved and gluten-free with 💯guaranteed of no cross contamination. 🇧🇸

Happy Father's Day! Look at the bounty God has blessed us with this year. This is the last of the mangoes for this season and indeed this was a treat. We feasted on these mangoes for breakfast lunch and dinner. We call these particular mango hairy mango because they are stringy or hairy. The fruit grows wild in The Bahamas and is enjoyed during the beginning of summer. Our fruits are always ready in time for Father's Day. Organic fruits are always celiac and gluten-free as long as you pick them yourself to avoid cross contamination👍🏼🙂 As always celiac and gluten-free. 🇧🇸

Spring is in the air! Island life is the best life! Most of us enjoy the fruits of our labor. We are one of those families that are blessed with a few native trees. One of those trees is called a Tamarind tree. Some how our tree has been bearing fruits nonstop. The pods are sweet, sour and meaty. The leaves of this tree are also edible, it’s very sour. I ate it all the time as a kid. For those who can’t bare the sour taste transform it into Tamarind sauce. This a delicious treat that we eat in small portions when this fruit is plentiful. Another vegan gluten-free recipe for my vegan celiac friends. I’m calling this a spicy vegetable loaf😂 served with white rice and carrots. Who doesn’t like a good moist meatloaf? My kids were certainly fooled I waited for them to eat it and then I revealed the secret recipe. “What is going on mom are you trying to convert us to being vegan🤣”, my kids said while scoffing it down😁. Honestly my inspiration came from my son’s friend who is a vegan. He had so much faith in me that he suggested all of these recipes for me to try. Thanks Richard for the inspiration. Here’s another quick recipe for my vegan celiac friends. Introducing my vegan gluten-free vegetable fritters served with a yum yum sauce. This conch version is a popular staple in the Bahamas. Oh how I’ve missed them🥹🥹. This is usually served along side a delicious bowl of conch salad and a Bahamian beer called Kalik or a good smooth strawberry daiquiri. Just made them and my kids devoured them🤣. As always gluten-free with no cross contamination and celiac approved. 🇧🇸

This has truly been an experience and a journey for me. This bread recipe took five years to prefect. I wanted to delete the previous post with my first breads and my husband told me that my trials merited my triumphs. Hmmmm.. well said🤔😊. I have thrown away so much ingredients trying to recreate a better version of gluten bread. Any one struggling with celiac disease or gluten intolerance knows the struggle of finding a good bread. I remembered the first time I made a gluten free bread my brutally honest seven year old said, “mommy what is this?” I was so embarrassed but proud all at the same time because I have never made a bread in my life. Now I can confidently say she gets excited when the house is permeated with the scent of freshly baked bread. I have my family to thank especially my daughter Riley who caught me crying in the kitchen at my many failures. She told me quietly avoiding the others from hearing that one day God will give me the right recipe and then I will be proud and that no one will be able to recreate or steal it from you. 🥹. Just as she said God did give me the recipe and now here we are. This bread is what I’m calling a vegan whole meal bread made with high fiber flours. As always gluten-free with no cross contamination, and celiac approved. 🇧🇸

I want to extend my gratitude to everyone who has wished me birthday greetings yesterday. No man is an island and I am eternally grateful for those who started this journey with me and who stood by me. Having so many food allergies can be overwhelming and daunting all at the time. Over the years I had to learn to cook all over again. As I had passed down every food allergies and celiac disease to all of my children. This adjustment might be hard for some people but not for me. I had always yearned to cook. When my mom taught me to cook she retired and passed the baton on to me😂🤣🤣Later I recreated all of her dishes. Believe me she was not happy but before she died she told me that the student had become the teacher.🥹I am honored to have learned from the best. During these home school days I prepare meals that are reminiscing of the foods that they were use to. My two youngest loves pasta so I’ve decided to recreate the nostalgic Kraft dinner recipe. This pasta is made from brown rice penne pasta with a home made vegan cheese sauce. The fried chicken recipe is what I’m calling “chicken in da bag”. Having food allergies don’t have to be a challenge. Simply plan your meals ahead and always cook in bulk and store for easier access. As always no cross contamination, gluten, egg and dairy free. 🇧🇸

It’s my birthday today🥳and our family’s tradition is that we get a special meal request. My request was steak, potatoes and asparagus, but the kiddies wanted Chinese food. Your not a mother unless you compromise for your children 😂. Since I do all the cooking why not improvise. I decided to do my version of pepper steak served with white rice. For dessert sugar cookies with dark chocolates and walnuts, chocolate sugar cookies with white chocolate chips and a healthy browny bites made without sugar and oil. We enjoyed our small feast and look forward to our upcoming birthday bash at the end of this month👍🏼The deserts were All vegan and gluten-free. As always gluten-free with no cross contamination. 🇧🇸

Happy new year to all! What do you prepare before the big New year’s feast ?How about something light. Actually, I had a sensational craving for conch fritters 😫unfortunately being celiac and with other food allergies my choices are nonexistent and which restricts me to a rigid gluten-free,dairy- free and egg- free diet. So how do you quench that craving? Well you improvise and make Vegan and gluten-free Korean pancakes that is loaded with vegetables that even the pickiest kid would eat. This was served with a “yum, yum sauce aka conch fritters sauce😉This was a hit my family My baby calls it vegetable conch fritters😂. As always gluten-free and with no cross contamination. 🇧🇸

Happy holidays to everyone. This is the time to clean out your fridge using up all of those sad produce in preparation for the new year. Staring at me was two heads of cauliflower that I didn’t know what to do with. I have never cooked this before. So I started brainstorming and I thought of buffalo wings.
