Along with being celiac my children and I all suffer from these food allergies. I grew up in a time where gluten and food allergies were unheard of. My entire life I struggled with food
thinking that I had a gastric problem. I began an exclusive gluten-free diet around 2016 and despite my efforts I kept getting sick. I was diagnosed a week before hurricane Dorian in 2019 with celiac. I had to alter all of my recipes and ensure that my kitchen was safe for us. Shortly after I was diagnosed my children started experiencing the same symptoms as I did. Then the food allergies started adding to the list. At this point I was between a rock and a hard place. I had already eliminated wheat and dairy from our diet, now I had to learn to cook without eggs, dairy wheat, soy, peanut, and tree nuts. At this point I was overwhelmed until my middle child Riley gave me a resounding pep talk. She said that God did not allow us to have this condition for me to give up and that my gift was not just for us but for the world. It was then that I created a vegan and celiac wholemeal bread. This was one of my many creations that was inspired by that day of me almost giving up. We want to demonstrate to the world that despite your food restrictions you can still enjoy flavorful, and familiar food again.
