Chewy Ginger Molasses Cookies with Warm Spices
Ingredients:
3/4 cup unsalted butter, softened
1 cup granulated sugar (plus extra for rolling)
1 large egg
1/4 cup molasses
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
Directions:
Preheat the oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter and 1 cup of sugar until light and fluffy. Beat in the egg and molasses until well combined.
In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the dough into 1-inch balls and roll each ball in granulated sugar. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
