We are 6 weeks from kicking off the 2025 wedding season and we are pumped!

Here are some of the dishes that have proven very popular to our couples who have joined us for tastings so far this year.

Sous-Vide Roast Beef. This flavourful beef dish spends a minimum of 5-6 hours in a water bath, cooked to a perfect medium-rare temp of 130F followed by a flash sear in a cast iron pan. This dish is served over a bed of garlic mashed potatoes with roasted seasonal vegetables and our famous rosemary gravy. The beef is blushing pink and stunning to see on a plate. You barely need a steak knife for how tender this dish is!

Maggy’s Chicken Presents. Our most popular chicken dish! Chicken breasts are pounded thin, filled with a house-made cream cheese filling with herbs and lots of garlic. We wrap the stuffed chicken in prosciutto and serve drizzled with garlic butter. Served with fragrant herbed rice and roasted seasonal vegetables. That first fork into the meal where the cream cheese spills out is where the fun begins!

Chicken Marsala. Just as our Chicken Presents became very popular Chicken Marsala stepped in and said “Hold on!”. Chicken thighs (trust us, you want the thighs - they are juicier and so full of flavour) are dredged in flour, sea salt flakes, thyme and garlic/onion powder and fried in a generous helping of salted butter. The drippings from frying are used to make the marsala sauce with premium marsala wine, thyme, rosemary, quality stock and, of course, cream to add that lovely creaminess marsala is known for.

Ricotta and Spinach Stuffed Pasta Shells. A vegetarian dish that pleases guests of any age (we got rave reviews from a guest’s very picky five year old, and as parents ourselves, we brag about that!). Pasta shells are stuffed with a spinach, garlic and herb ricotta mixture. The shells are served over a bed of smooth béchamel sauce and covered in our house made rustic marinara sauce. This sauce is made with San Marzano tomatoes, fresh basil, a lot more butter than you need to know about, and slow simmered with whole onions. Just before serving, the onions, which are now soft and fragrant are blended into the sauce to give it a velvety umami taste that makes the whole dish hearty and comforting.

These are just some examples of what we can do for you here at Maggy’s. All of our sauces, jams and dressings are house made, which adds to the overall comfort food vibe we strive for.

We have had a lot of fun perfecting existing recipes and discovering news ones over the winter. Our goal is to make delicious, comforting and hearty food that your guests won’t soon forget!
