📣 Exciting news for Parade of Chefs attendees! 🎉

Chef Dave Formosa from the Chatham-Kent John D. Bradley Convention Centre is thrilled to present a truly unique dish inspired by his incredible experience during the 2017 Kenow wildfire in Waterton National Park. 🌲🔥

His creation, smoked beef cheeks braised with haskap berry jus, served with potato puree and charred greens, tells the remarkable story of resilience—of the lone bison who survived the wildfire. Left behind during the evacuation, this bison found its way through pools of water and lived on, a symbol of strength and survival.
