Green Corn Moon Dinner at Bar OA Farms cut flower farm in GoStrathco is always the most beautiful setting 😍 Mexican cuisine menu: 1. corn tostasda with cactus (nopales) salad and queso fresco, 2. cold avocado and cucumber soup, 3. guava mole with chicken on rice and a side of pinto beans puree, 4. shoelace churros with Saskatoon berry jam.

Such a feast was had at Friday night's Terroir dinner collab at - so fun to cook with visiting chefs & from Philadelphia ( ) and local chefs & - shout out to for the bison and for coordinating!

Victor's dishes at last night's Terroir: Four Homelands dinner at inspired by his Mexican Indigenous (Zapoteca) roots 🇲🇽. The edible flowers represent his tie to the colours and floral designs of the huipil from Tehuantepec, Oaxaca. He first made a prehispanic sweet corn tamale called an 🫔 🤤 His main dish was an ancho chili relleno (rehydrated dried poblano pepper) filled with ground butchered by 🇮🇸 and / and served on a bed on pinto beans with roasted avocado leaves 🥑 all this was for now moving to Calgary for the weekend!
