Here are some of our tips to assemble the perfect charcuterie board! 🧀

Find a wooden, marble or otherwise decorative board to use as your base, start with larger pieces of meat or cheeses first (a wheel of cheese or whole piece of cured meat).

Try to incorporate different sizes and textures of items on your board. Try to precut meats and cheeses much as possible to make it easier for your guests to snack on. Style your meats and cheeses differently such as layering, cutting, cubing rolling each piece.

Meats and cheeses are only the start, be sure to add some sweet and savoury accompaniments such as jellies, preserves, mustards, small fruits, olives, nuts etc.

Don’t forget some simple carbs such as crackers or small pieces of bread – these can be on the board or in a separate basket.

Remember not to overcrowd your board and use a variety of different items to keep people coming back for more!

We get such great feedback every time we serve this salad at events, we convinced our Head Executive Chef, Ram Sharda, to share his recipe with you!
SALAD
1. Arrange arugula (6 cups) in a bowl
2. Top it with sliced pickled beets (x2) and sliced peaches (x2)
3. Cut grape tomatoes (1 cup) in halves and arrange nicely
4. Top the salad with candied ginger walnuts (recipe below) and feta cheese (1/2 cup)
CANDIED GINGER WALNUT
1. Boil water in a pot, once boiling add walnuts (1/2 cup) and allow to boil for 4-5 mins.
2. Drain the water and keep walnuts aside.
3. Mix confectioners sugar (1 cup) and ginger powder (to taste), mix well
4. Toss blanched walnuts with sugar and ginger powder and arrange in a baking tray.
5. Bake at 350 f for 8-10 minutes. (time may vary depending on oven type)
6. Once you see the browning of sugar on the walnuts, its ready!
7. Set aside to cool down before using in the recipe.
DRESSING
1. Mix raspberries (1 cup), olive oil (250 ml), white wine vinegar (85ml), honey (75ml), fresh lemon juice (15ml), salt and fresh mint leaves (to taste) together and blend, until a smooth emulsion is formed.

It's the first official day of summer, National Indigenous People's day, the longest day of the year, the last day of school for some of our youngest customers, summer solstice, international day of yoga AND this year it falls on a Friday so we can celebrate into the weekend.

"I am the Safety Advisor"
Where are you from?
"Born and raised in Saskatchewan."
What is a little bit of your background in the industry?
"I started in the food industry as a butcher. From there I moved to running the most northern food processing plant in responsible for harvesting and processing Wild Arctic Char and Wild Muskox meat for 6 years. Then I moved into the world in various roles including General Manager and Safety Manager. My most recent role before working at Red Table Foods was as a District Manager of Northern for Tim Hortons”
What is your favourite thing to do outside of work?
"Spend time with my . Woodwork, Archery, camping."
What is your favourite meal or snack?
"Cannot pass up a good Steak Dinner….. or chocolate."
What is your favourite quote?

What is your favourite book and why?
"3 Day Road – Joseph Boyden. It touches on many levels of the human mindset and trials that have to be dealt with from tragic events; War, abuse, etc.; and how some deal with these issues. It also opened my mind to the aboriginal culture, the effects that residential school, War, and racism within Canada in a not too distant past."

"Just found out about this one – Animal Kingdom."

"I oversee all Red Table operations from the Sales process to day to day activities for everything from Events to our Contracted Catering and locations – all while growing our existing partnerships and identifying areas for growth."
Where are you from?
"This is a tough one – I lived in Olds, until I was 10, then Doha Qatar, The Hague, Holland and I finished school in Katy, Texas. has been home for the past 12 years."
What is a little bit of your background in the industry?
"I’ve always loved connecting with people – I’ve been fortunate enough to have spent my career building customer service and operations teams in various industries (Tourism and IT), and I love transitioning this skillset into the industry."
What is your favourite thing to do outside of work?
"Being a mom! I have the coolest kid!"

"I am the Event Coordinator for Red Table, which includes all things events, any location, anytime and anything! I am especially excited to oversee the Food Truck this summer!"
Where are you from?
"I grew up in Red Deer and moved to a few years ago for school and love it here!"
What is a little bit of your background in the industry?
"I have been involved in events, whether it be volunteering, job shadowing or schooling for a couple years now. I completed my Event Management Certificate through NAIT in 2018, and have been learning more and more every day."
What is your favourite thing to do outside of work?
"I love being outdoors, now that the weather is looking a little nicer I enjoy patio days or going out for walks with my adorable puppy. (Daisy has been featured on our Instagram page before, go check her out ;) )"

"I would have to go with the classic Caesar salad. Could eat one every day!"
