Strolling through the narrow streets, I was captivated by the scent of fresh sea air, the laughter of locals, and the charm of cafes overlooking the harbour, and the intense heat of the summer sun.
In Portofino, itās easy to lose track of time, mesmerized by the yachts bobbing gently against the backdrop of lush, green hills. Santa Margherita, with its vibrant piazzas and graceful palm-lined promenades, felt like a warm embraceāinviting me to slow down and savour every moment.

These are called cuzzupi (from my momās recipe archive of Calabria, Italy). Traditionally made at Easter and a favourite in our family.
Easter Cookies (Cuzzupi)
6 eggs
2 cups of sugar
1 cup of milk
6 oz vegetable oil
1 tbsp vanilla extract
7 cups of flour
2 tsp baking powder
1. Put flour and baking powder in a large bowl and whisk it to combine the two ingredients. Set aside.
2. Beat the eggs and the sugar in a large bowl or using a stand mixer. Beat until you no longer hear the sugar when you stir the mixture.
3. Add the oil and the milk, beat quickly until it is combined. Add the vanilla extract and mix well.
4. Slowly add the flour mixture to the egg mixture and stir using a spatula. It will begin to turn into a dough. At this point, put the dough mixture onto a lightly floured surface and knead it until it becomes smooth. It should only take a few minutes.
5. Once the dough is formed. Cover it and set it aside for about 10 minutes.
6. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
7. Using a knife, take a piece of the dough and start to roll it out into a long piece about 8ā long. If it is too long, cut it. Take the 8ā piece and bring the two ends together making a circle. Place on a parchment lined baking sheet. Continue until all the dough is used. The other option is to make a braid using 3 long pieces.
8. Brush them with egg wash.
9. Cook for about 15-20 minutes or until the they are golden.
10. Cool them completely before icing them.
11. Tip: this recipe makes a large batch. I recommend freezing the cookies without icing and icing them when you need them. Also, the cookies taste delicious without the icing too!
Directions for Icing: Whisk the icing sugar, milk or heavy cream, and vanilla extract together. Dip the top of the cookie into the icing or use a spoon to drizzle. Put the cookie on a drying rack and add sprinkles before the icing dries.
