We have a Christmas tradition in our house to make eggnog waffles, I use coconut nog for a dairy free version. Recipe below if you’d like to make these and start your own tradition. Also works great for fluffy pancakes!

2 cups flour
2 tsp baking powder
2 tbsp sugar
1 tbsp vegetable oil
1 cup eggnog
1 cup water
3 eggs, separated
2 tsp vanilla
Pinch of salt

In a bowl or stand mixer, beat egg whites until soft peaks form. In another bowl combine the rest of the ingredients and mix until smooth batter forms. Gently fold the egg whites into the batter. now you’re ready to make waffles or pancakes! Serve with butter of choice and syrup.
