It’s Tuesday, I mean it’s Taco Tuesday!!! No celebration at a guests house or anything, just me and the fam.

Slightly different type of meal than I usually post about, but still had to figure out a way to elevate it, right??

When the “Gram” tells you that you haven’t posted in over a week, you start to press a little, 😆.

Double stuffed Dorito crusted crunch wrap filled with queso, and refried beans, ground beef cheddar cheese, and a whole lot of other taco toppings.

Nothing better than getting a chance to travel. What do you look for when choosing a destination? Beach? Mountains? Lakefront? Ocean? It may not be the most important for me personally, but almost immediately after choosing a destination, I check out the food scene.

Last night was the perfect group to do a play on global street food. They are definitely world travellers, who love to try different foods.

The menu:

Peruvian tuna ceviche, avocado, coconut sweet potato puree, charred corn 🇵🇪

Filipino smoked pork belly, banana ketchup (bbq sauce with mashed banana as the base, with some sriracha to add some heat), purple cabbage stir fry, fried egg, pickled mango, crushed peanuts 🇵🇭

Spanish fried paella cake (definitely not an authentic dish, but it would be similar to arancini), beef tenderloin, romesco sauce, grilled shrimp, saffron aioli 🇪🇸

Chinese sesame and cinnamon bao bun, banana whipped mascarpone, grilled peach, raspberry coulis, white chocolate, toasted almonds, espresso balsamic drizzle 🇨🇳

Haven’t been to Italy yet, but it is definitely one of the top destinations on my list. The food scene would be incredible, but the European vibe is unmatched.

The vibe from last night’s Italian themed dinner was pretty awesome too. Great group, and most importantly, great post dinner beers! Thanks!

Here’s the menu:

1. Cantaloupe, arugula,prosciutto , mustard vinaigrette, fresh mozzarella, crushed almonds

2. Lemon ricotta ravioli, lobster/pancetta wine and cream sauce, sundried tomato, toasted pine nuts and basil pesto

3. Coffee braised short ribs, fried polenta, fennel slaw, coffee/sambuca reduction , Kalamata olives, orange zest

4. White chocolate and limoncello semifreddo, macerated cherries, almond crumble, saffron lemon coulis

50th anniversary celebration tonight!!

“Just make whatever you want, Mike!” Always love hearing that!!!

After hearing the guests of honour had recently taken a trip to Portugal, I thought about taking them back for the evening. Never really went in that direction before, but always love a new challenge. After doing some research, and talking to a few of my Portuguese friends, (usually they help me learn swear words) here’s what was on the menu:

1. Pasteis de Bacalhau (cod fritters) lemon garlic aioli, carrot ribbon salad honey lemon vinaigrette, candied pecans, kalamata olives, hot honey goat cheese

2. Smoked pork belly, grilled shrimp, sweet corn puree, piri piri sauce , crispy potato skins ( cause there has to be potato somewhere)

3. Braised beef cheeks, plum and port reduction, fried egg, chestnut puree

4. Pasteis de Nata (world famous custard tart), almond and ginger crumble, port macerated cherries

Lots of fun with this one!!

Italian food……I’m guessing it’s the most popular answer when the question, “what is your favourite cuisine,” gets asked.

Celebrating Mother’s Day and a couple of birthdays last night, here’s what I came up with:

Roasted bone marrow, roasted garlic and lemon whipped mascarpone, tomato salad, crispy prosciutto

Lemon ricotta stuffed tortelloni, white wine and garlic sauce, grilled shrimp, smoked pork belly, roasted asparagus, pine nut gremolata

Coffee crusted veal tenderloin, parsnip purée, fennel and kalamata slaw, sambuca balsamic reduction

White chocolate semifreddo (basically ice cream mixed with meringue), almond crumble, strawberry rhubarb compote

As you look through these pics, notice the perfectly placed herbs and micro greens! Huge thanks to my sous chefs, Logan and Sam! Big foodies, that were right by my side , asking questions and helping out. You guys made my night!!

Celebrating a birthday again last night! It was a Mike’s choice type of a menu, and when the birthday girl’s 2 favourite cuisines are Mexican and Asian, seemed like the obvious choice was a fusion of both, right?

Had a lot of fun with this group and also with the menu!! Check it out:

1. Kind of a Mexican street corn angle. Gochujang (Korean) glazed halibut, corn fitter, smoked corn puree, cotija, coconut lime aioli, blackened shallots

2. Chinese 5 spiced pork belly, mole verde (similar to a traditional mole, but more herbaceous) Asian red cabbage slaw, soy cured egg yolk, sriracha honey drizzle

3. Sweet potato dumpling, Carne Asada beef cheeks, roasted plum sauce, avocado, pickled enoki mushrooms

4. Dessert nachos. Fried cinnamon wontons, honey whipped mascarpone cheese, grilled pineapple/mango, Mexican hot chocolate ganache, lime zest, crushed wasabi peas (yes!) ❤️

Big birthday celebration last night!

Within 7 seconds of walking in the house, I had a nickname, and within 7.5 seconds, I knew it was going to be a fun night!!😁

Here’s my Thai inspired menu:

1. Vegetarian dumplings, blackened carrot salad with a ginger cilantro vinaigrette, seared scallop, pickled papaya

2. Chilean sea bass, peanut butter curry sauce, mango salsa, pickled ginger

3. Ginger beer braised beef short ribs, coconut ginger reduction, roasted purple cabbage, red curry butternut squash purée, ginger scallions, toasted coconut

4. Thai tea infused crème brûlée, grilled pineapple, blackberry, shaved chili dark chocolate

Just getting back from a great family vacation, and NEED to tell you about our last night.

Peruvian food, courtesy of 7tablesonthebeach, situated right on the Atlantic Ocean. The food was absolutely incredible, but the owner, Santiago, took the experience to a level that we all were extremely impressed by.

He definitely enjoyed chatting with our family for quite a long time, and the feeling was mutual. After he made his suggestions for pre dinner drinks, which featured pisco, the Peruvian national spirit, we started inquiring about his menu.

Appetizer orders were put in, and the talk briefly changed to what I do back home, in the food world. A couple of my pics were shared, and he suddenly yelled out to the restaurant, that there was “VIP in the house!!” ( clearly he was working a tip, 😆)

Here’s what we ordered (pisco was really good, so I only have the one pic, 😬)

Ceviche, grilled octopus, seafood paella, mussels, red snapper (pictured) , and finished off Peruvian churros, which are stuffed with something similar to Bavarian cream. These churros are dunked in a shot glass filled with their “grappa” and then used to mop up ice cream (the grappa adddd an amazing flavour, right, Chloe????)

The food was fantastic, but Santiago, and his staff, took this night from a great meal, to something that will be remembered for a very long time!!

Last night I hosted a group at The Woodbridge House again, this time , we celebrated Mardi Gras! It might not have been Bourbon Street, but the historical beauty of the property never disappoints. Definitely check it out!!

I knew going in that it would be a great group, but what made it even better was my partner for the night, my daughter Chloe. Thanks for the great help, and for showing me that you DO know how to clean!

Here’s what we came up with:

Carrot ribbon and arugula salad, fig, burrata, creole mustard vinaigrette, beer battered okra

Gumbo, butter poached lobster tail, pickled okra, blackened shallots

Braised lamb shank, sweet potato Pavé, bourbon pecan sauce

Tiramisu with a twist (layer of bananas foster, which is an iconic New Orleans dessert - spiced rum flambéed bananas), candied pecans, raspberry

When you get asked to prepare some apps for an open house that is being put on by , you should never hesitate because you know it’s going to be done perfectly!

However , when you look at your calendar and realize you will be in Toronto that day, you second guess……until she mentions that muscederevineyards will be there, pairing their wines with your food.

Obviously, you figure it out!! (Of course, with full trust in Stacey and Dave, and whoever else was involved, to be great food stagers, and photographers 😁)

Here’s what was put together:

Venison tartare, roasted grapes, toasted walnuts, horseradish aioli paired with Cabernet Sauvignon

Wonton cup filled with honey whipped goat cheese, mixed roasted mushrooms, pickled onion, Sicilian lemon balsamic vinegar paired with Sauvignon blanc

Skewered chorizo,grilled shrimp and pineapple, romesco dipping sauce (roasted red pepper and pecans) paired with cab franc

Limoncello tiramisu paired with Pinot Grigio

Hopefully everyone had a great family day weekend!!
I’m often asked at my events, if I cook like this at home, and the answer is a hard “no.” Unless it’s a birthday, or anniversary, or something special, our meals are precooked the previous weekend , but we do always find a way to eat together.
A Monday night that didn’t involve both kids at their swim practices,followed by baseball practice, meant we had an opportunity, so we took advantage!
Family day was perfect for us, except for the chocolate soufflé that got taken out of the oven 2 minutes prematurely. (Might be why there was no picture taken? 😆)
We had a fennel salad with a sambuca vinaigrette, chestnut soup, with roasted mushrooms and pickled onions, and a rack of elk, with a root vegetable pavé. (Is that the right accent Izzy???)

I hear there’s a football game going on today??? It’s being played in New Orleans, which is home to an amazing food scene. Actually, I did a New Orleans theme a little while back , and when asked what has been my favourite event that I’ve ever done, that one is often my choice.

There was such good feedback on my event last weekend at the Woodbridge House, that I am very excited to say that they are open to me hosting more!

So, March 8 , I’m looking for a group of 8 - 10, for a Mardi Gras themed dinner, at the Woodbridge House!!

Here’s some pics of my New Orleans night from a little while back to try and twist your arm. Take a look and let’s book it!

Menu was:

Fried green tomato , burrata cheese , soppressata, grilled peach, candied Cajun pecans, creole mustard vinaigrette

Beef tenderloin , mushrooms, blackened shallots, bourbon cream sauce

Gumbo, crab cake, pork belly, crab claws, crème fraiche, pickled onion

Banana bread French toast, bananas foster (basically a caramel/rum sauce) whipped cream, raspberry, mint
