Happy to have contributed to a birthday celebration last night!
When we booked this a while back, the birthday girl requested a repeat of a menu from a previous groups party. What do I do? I almost felt like I was cheating…..first time I’ve ever duplicated a menu.
Never disappoint a birthday girl, right?? (I had to make some minor changes just for my own sanity)

Check it out:

1. Shrimp cake, fennel salad, lemony ouzo vinaigrette, torched mandarin, fennel fronds, Kalamata olives

2. Crispy pork belly, seared scallop, cider braised onions, roasted shiitake mushroom, apple/radish slaw, micro radish, saffron aioli

3. Lamb shank, beet ravioli stuffed with ricotta/thyme/lemon zest, mint pesto , roasted heirloom carrots, toasted walnuts, pickled shallots

4. Chai tea infused crème brûlée, blackberry, mint, toasted almonds, lemon zest

Christmas season is here! Busy times ahead, for sure. Began this weekend at a beautiful home on the water, where I was asked to do a not-so-traditional, traditional meal, with the menu being a total surprise. (My favourite!)
I definitely wanted to hit on a holiday/winter vibe. Here’s the menu, which by the way, was totally gluten free to accommodate some allergies. Check it out:

1. Golden and red beet ravioli stuffed with honey whipped feta , arugula salad with a cranberry orange vinaigrette, roasted heirloom carrots, toasted walnuts , citrus zest

2. Butter poached and torch finished lobster tail, chestnut veloute (basically a purée), chestnut crumble, black oyster mushrooms, torched leek, pickled apple

3. Coffee braised beef cheeks, butternut squash risotto, pomegranate, micro arugula, espresso balsamic

4. Merlot poached pear, white chocolate mousse, cranberry/raspberry compote, toasted almonds, citrus zest

Good morning! Just revisiting some events from the past, and came across one that might showcase , for those who don’t know, what i do. It happened to be a “Mike’s choice type of meal”…… my favourite!!

This was a retirement celebration for a father/grandfather and his family. The retiree was blessed to have his whole family together, for the first time in years and was given my name to cater a meal in his home. He was very unsure of what kind of food to offer, so I got in touch with one of his kids. (Gramps had no idea)

The one thing I noticed when talking with “gramps” was a very thick accent, and his son informed me that he was from Switzerland. Had no clue about Swiss cuisine, so it was time to study. 🤔

Swiss food is not just about chocolate and cheese after all! Lots of influence from Italy, Germany and France. Here’s what I came up with:

1. Baby green salad with a honey lemon vinaigrette, roasted carrots, split fig, stuffed with burrata cheese, shaved capocollo, mint chimichurri, toasted pine nuts

2. Rosti ( potato fritter, but I substituted sweet potato) topped with short rib with Demi-glacé, pickled onion , horseradish crema, pea shoots

3. ÄLPLERMAGRONEN (authentic version is basically Mac and cheese with apple sauce)
Butternut squash ravioli, Emmentaler and Gruyère white wine cheese sauce, smoked pork belly, crab claws, apple/onion compote, blackened shallots

4. Muesli (basically granola), apple/pear flambéed with amaretto, mascarpone whipped cream, citrus zest and shaved chocolate

It definitely was an emotional night for the family (in a very positive way!!)

Ok, snow can show up for Santa, but early November is a bit much!!! Good day for couches and football I guess!

Most popular question asked of me at a dinner party? “Do you cook like this at home?”

We try our best to navigate our kids sports lives, to somehow allow us to eat dinner together, which is often approaching 7:30 on a weekday. The best thing we ever started, was meal prep for the entire week (not weekends). Kids are not always thrilled that a premade stir fry with ground beef is on the menu for the 73rd week in a row.

If their social lives allow it, Saturday night is a chance to do something a bit better, like last night…

Walnut crusted salmon, roasted beet risotto, roasted purple carrots, topped with pickled carrots and micro arugula.

I must say, I’ve definitely enjoyed becoming a temporary blue jays fan!! (Go 🐅) Game 7 was absolutely an all time classic!

When you have a dinner party booked long in advance, and you realize as it’s getting closer that there’s a potential game 7 on the same night ….. I’m wondering if there was a family vote to cancel ????😆

Luckily for me, I never got the 🥾!!

Here’s what I came up with:

1. Fennel and cucumber salad, torched mandarin, Kalamata olives, grilled pita crisp, creamy ouzo vinaigrette, grilled shrimp

2. Crispy skin pork belly, on a bed of cider braised onions, seared scallops, Dijon aioli, apple and radish salsa

3. Lamb shank, roasted heirloom carrots, beet ravioli stuffed with ricotta and lemon zest, mint pesto, toasted walnuts, pickled onion

4. Crown royal (birthday boys favourite) crème brûlée, drunken pineapple, blueberries

It’s hard to believe we are approaching winter and the Christmas season again!!!

Hoping everyone had a great thanksgiving weekend!! It was good to spend time with family, but, wow, what a horrible sports weekend for me. (Wolverines, Lions, Tigers!!!!)

Not sure if I like sports anymore??? (I even hopped on the blue jays bandwagon for a minute)

Anyways, still looking for a group for an elevated “tailgating “ meal with a twist, at The Woodbridge House in Kingsville on November 21.

To give you a feel for where I might go with this:

A grilled sausage on a bun, with some onions and peppers and mustard would always be a possibility on a normal tailgate.

A possible twist on this might be a steamed bao bun, poached lobster “sausage” with a bit of chorizo mixed in, pickled okra, creole mustard aioli, maybe
some blackened shallots???

Very excited to partner with The Woodbridge House once again. (Such a gorgeous property!) The first event will be Friday, November 21, and the inspiration is VERY dear to me, lol.

Sports has always been a very important part of my life, and one of the best parts of being a dad, is watching my girls navigate through their athletic journey. I am lucky to watch them kick butt in their respective sports, but even better than their results, is seeing their passion!!

How the heck does this relate to food???

Being a “foodie,” and a sports nut, there’s nothing better than setting up my own bbq, and seeing thousands of others doing the same at the university of Michigan for a tailgate party, prior to watching a football game! Or walking into Comerica Park and smelling the sausage and hotdogs!!

With that being said, the first group of 8-10 people to confirm with me, will be experiencing a 4 course meal, consisting of stadium/tailgate food. Of course, this will be elevated with a twist.

So…..

Friday Nov 21 at Kingsville’s The Woodbridge House (available for overnight stay if interested)

There’s been a couple of inquiries recently, if I offer a gift card of some sort. I was a bit hesitant at first, but have decided to offer them. (Thanks to my creative team for the templates, 😊)

Bonjour!!

Resharing some pics from a dinner featuring my take on French cuisine.

Why?? I just dropped my daughter off at the airport yesterday, she’s off to experience Paris with my wife.

Very happy that she gets to experience one of the greatest food destinations in the world!!
I’m curious, though. With my love of food , and my vast knowledge of the French language , why am I not on this trip????( kindergarten French award recipient….yes it’s a thing!! Probably was able to count to 3 and everyone else only got to 2)

Kind of like leaving Michael Jordan on the bench when you need a last second shot to win the game.

Anyways, I’ll get over my jealousy, obviously very excited for them! If you’re interested in a unique dining experience, let’s book something!!

It’s Tuesday, I mean it’s Taco Tuesday!!! No celebration at a guests house or anything, just me and the fam.

Slightly different type of meal than I usually post about, but still had to figure out a way to elevate it, right??

When the “Gram” tells you that you haven’t posted in over a week, you start to press a little, 😆.

Double stuffed Dorito crusted crunch wrap filled with queso, and refried beans, ground beef cheddar cheese, and a whole lot of other taco toppings.

Nothing better than getting a chance to travel. What do you look for when choosing a destination? Beach? Mountains? Lakefront? Ocean? It may not be the most important for me personally, but almost immediately after choosing a destination, I check out the food scene.

Last night was the perfect group to do a play on global street food. They are definitely world travellers, who love to try different foods.

The menu:

Peruvian tuna ceviche, avocado, coconut sweet potato puree, charred corn 🇵🇪

Filipino smoked pork belly, banana ketchup (bbq sauce with mashed banana as the base, with some sriracha to add some heat), purple cabbage stir fry, fried egg, pickled mango, crushed peanuts 🇵🇭

Spanish fried paella cake (definitely not an authentic dish, but it would be similar to arancini), beef tenderloin, romesco sauce, grilled shrimp, saffron aioli 🇪🇸

Chinese sesame and cinnamon bao bun, banana whipped mascarpone, grilled peach, raspberry coulis, white chocolate, toasted almonds, espresso balsamic drizzle 🇨🇳
