New Grilling Menu is available starting today! We understand that these are difficult times for everyone so we decided to create a 2-course summer grilling menu composed of locally sourced ingredients.

Before we get too far into the mother sauces we need a basic understanding of what a roux is and how it's used. A roux is used as a thickening agent for gravy, sauces, soups and stews and its flavour profile can be altered depending on how long you cook it for.

The FOUR varieties of roux are white, blond, brown and dark brown. The different colours are a result of how long the roux is cooked; white is cooked for the shortest time, while dark brown cooks the longest.

White and blond roux's are usually used to thicken sauces and soups.

Brown and dark brown roux's have more flavour but less thickening power compared to a white or blond roux.

Enjoy some hearty pasta with this recipe by one of my favourite Chef’s from Winnipeg, Ben Kramer. This is easily one of my favourite dishes to make because it’s so filling and versatile! I usually pair mine with a parmesan cream sauce but occasionally I enjoy tossing them in cinnamon and sugar after pan frying.

Learning which flavour profile pairs with the item you’re cooking goes a long way! Although you do need to be careful with the smoke points (the temperature at which the oil begins to produce a continuous smoke). For example, because sesame oil has such a low smoke point, it’s typically used as a finishing oil compared to the peanut oil we would normally fry it in.
