Thanks to @prairiebbq for the recommendation on this unit, very very impressed
.
Did a shelf check for hot spots, set at 250, range was 248 bottom, 256 top shelf
.
Overnight cook at 180 for 3 hours, then 225 for 11.5 hours
.
The temperature stability was spot on
.
