I missed it this year but who’s coming with me to Austin Texas next year for Hot Luck 2025? I haven’t decided if it’s going to be a drive again or a fly out from Calgary but I would love to show and share the experience of Austin that I had along with seeing the things I missed. 3 days a week you will usually see my truck and find me here in the catering kitchen of Premium Sausage in Seven Persons working for my little local business Smouldering Rose Barbecue & Dessert Co.

I wanted to thank the Premium Sausage Family for giving me the opportunity to cook again and fall in love with my style of Barbecue and the Desserts I enjoy making to make all of you smile, along with making me feel welcome everyday with visits to see what I’m making.

I believe in making all of my food to sell the same way I make it for our home for yours. I enjoy the challenge of making gluten free options as it gets me thinking and my heart truly goes out to those who have allergies and can not enjoy the food so many of us love.

Here’s an update for everyone this weekend and after 6 months of staying away from cooking I have decided to start looking for a commercial kitchen for Smouldering Rose Barbecue & Dessert Co. and this week I found one and sign my lease contract next Tuesday.

I will be focusing on 6 Small Batch Flavours of FreezeCakes, 2 Barbeque Sauces, the 4 Original Rubs adding 2 more one for Home Made Bacon and one for Briskets, 2 Pasta Sauces, I am working on a Bourbon Cherry Hot Sauce, my Soft and Chewy Peanut Butter Cookies stuffed with Peanut Butter Cups, my massive puzzle charcuterie boards and Oh Yes last but not least GG Ruth’s Red Relish.

My goal in the next 2 years is helping bring people together, creating experiences and memories over great food.

Smouldering Rose Barbecue & Dessert Co. FreezeCakes 125ml $8 Each

The Story of the FreezeCake is it is my moms creation that we have been enjoying over decades and with my dedication I took the recipe, broke it downa and created a smooth heavily whipped frozen cheesecake delight. With all of our bases we try out best to make these gluten-free starting with Kinnikinnick graham style cracker crumbs or their chocolate cookie crumbs for the base of our desserts. The base of all the FreezeCakes are the same starting off with heavily whipping cream, De Jong’s Honey, organic Vannilla, Cream Cheese, Sweetened Condensed Milk, from there we add the flavouring. The flavourings all depend on the request or the moment such as these small batch creations.

The Grinch is a white chocolate mouse infused with peppermint then colored using a green fondant coloring to be easy on the system adding in crushed candy canes then finishing off with crushed candy canes. Once the flavour profile has set up it is then added to the FreezeCake base.

Rum and Eggnog is a white chocolate mouse infused with Eggnog and Spiced Rum and once this is set up it is added to out FreezeCake base then dusted with Pumpkin Spice.

Rootbeer Float and yes I know Rootbeer is not spelled correctly. This starts off by taking A&W Root Beer and cooking it down for hours to create a light root beer molasses for the top layer. This is also a white chocolate mouse that has 2 stages for the layering, the first layer is infused with root beer extract the same used to make refreshments and the second layer infused with the A&W molasses. Once both flavour profiles are created they are added to the FreezeCake base layering the Root Beer Extract first then topping of with the A&W Vanilla topping, giving us the root beer float.

The Lemon Splash is a creamy lemon delight that is a lemon custard made from scratch adding in lemon zest. Once this flavor profile has set over night it is added into the FreezeCake base giving the perfect balance of tang and sweet for a bright and refreshful treat. This dessert is then topped off with a sweet slow boiled in raw sugar Lemon Wheel that is then dipped in sugar and flame torched to enhance the flavour experience.

Smouldering Rose Barbecue & Dessert Co. Candied Jalapeños, Candied Jalapeño Habaneros, & Candied Jalapeño Scotch Bonnets 250ml $12 Each

All three are locally sourced peppers Candied in a brine of Rice Vinegar of a 5% Acidity, Organic Raw Sugar< Fennel Seed along with a blend of White, Red, Black and Szechuan Pepper Corns.

Candied Jalapeños start off sweet and crisp with the flavour of the Jalapeño coming in followed by the heat, heat boing more due to the Jalapeños with a heat rating of 2500-8000 Scoville Units.

Candied Jalapeño Habaneros are a hotter version of the Candied Jalapeños starting off sweet and crisp followed by the combination flavour of both peppers then ending in the heat, heat boing more due to the Habaneros with a heat rating of 100,000-325,000 Scoville Units.

Candied Jalapeño Scotch Bonnets are our hottest version of the Candied Jalapeños starting off sweet and crisp followed by the combination flavour of both peppers then ending in the heat, heat rating of Scotch Bonnets with a heat rating os 100,000–350,000 Scoville units.

Smouldering Rose Barbecue & Dessert Co. Rubs 145 Grams $13 Each Glass Jars

Fired Up Rub is the OG that took 3 years to perfect and is a Custom blend of 20 Herbs and Spices, Smoked Sea Salt, Kosher Salt, 4 Pepper corn Blend, Dry Mustard, Coffee, Raw Organic Sugar and Brown Sugar. This rub starts off amazing and then brings in the heat of cayenne, great on pork, chicken, pan fried salmon or tilapia, potatoes, eggs or even add to a 50/50 of Greek yogurt and Helman’s mayonnaise let sit over night for a chip dip.

Getting Fired Up Rub is Fired Up Rub with all the cayenne removed leaving a Custom blend of 20 Herbs and Spices, Smoked Sea Salt, Kosher Salt, 4 Pepper corn Blend, Dry Mustard, Coffee, Raw Organic Sugar and Brown Sugar. This rub is great on pork, chicken, pan fried salmon or tilapia, potatoes, eggs or even add to a 50/50 of Greek yogurt and Helman’s mayonnaise let sit over night for a chip dip.

Latente Rub Lantente Being Spanish for Smouldering is Getting Fired Up Rub with 2 Spanish Cumin's a Custom blend of 20 Herbs and Spices, Smoked Sea Salt, Kosher Salt, 4 Pepper corn Blend, Dry Mustard, Coffee, Raw Organic Sugar and Brown Sugar. This Rub is perfect for Pulled Chicken for Tacos or a Creamy Chipotle Chicken Dip along with Ground Beef.

Lone Star Lamb was brought back from the Texas trip in a jar with a list of the ingredients including Sumac, Cinnamon, Oregano, Garlic, Himalayan Sea Salt , Brown Sugar and Organic Raw Sugar not the formula. After playing with the ingredients and getting our version the recipe was set. This Rub has been tried and tested on Lamb or Beef smoked then finished on an bed of Carrots/ Celery/ Onions in the oven, Vegetables alone tossed in Olive Oil then oven roasted and for breakfast eggs.

Cinnamon Butter Malbec Pasta Pizza Sauce or The Nuge Pasta Pizza Sauce

This has been a recipe I have been making since 2004 starting off with Fresh Red Onions, Garlic along with Herbs and Spices adding in Puréed Tomato’s after the onions, garlic and herbs have perfectly sautéed incorporating each other. Over the hours while cooking down the sauce constantly seasoning for that perfect balance and thickened to the constancy a bottle of Malbec wine is added then cooked down again. At the end a smooth creamy salty butter is added to give a rich and creamy flavour profile along with a pinch of cinnamon to finish off that adds a heightened flavour. And for those who are a little hesitant on the cinnamon like a close friend the sauce is made exactly the same with out the cinnamon at the end giving us the Nuge.

The Barbecue Sauces $17 Each

Small Batch Smouldering Rose Barbecue & Dessert Co. Uncut Smoked Bourbon Cherry & Uncut Bourbon Blueberry 500ml

A 3 Day process starting off with steeping Red/ White/ Yellow Onions, Fresh Garlic, Getting Fired Up Rub on Grizzly Paw Root Beer/ Ginger Beer/ and Black Cherry Cola with Organic Black Cherry Juice for 6 hours then refrigerated over night pulling everything together. Next day the ingredients are puréed until smooth, then placed back onto heat until brought up to temperature. Once temperature is achieved, puréed tomatoes are added and cooked down while adding the remainder of the ingredients while continuously cooking down until a thick uncut base is formed usually taking 12 – 16 hours. At the end of the process while the batch is thick ad perfect either 12 Hour Smoked Four Roses Okanagan Cherries are added or the Four Roses Bourbon Blue Berry Jam. The Sauce is then jarred in the old fashion canning processed, cooled and labelled. Smoked Bourbon Cherry is perfect for Pork or Chicken mainly Pork while Bourbon Cherry is amazing with mainly Chicken. I am proud to say that the only ingredients other that the Colas and Organic Black Cherry Juice that come from a package or container are French’s Mustard, Molasses, Brown Sugar, Organic Maple Syrup, Malbec Wine and Apple Cider Vinegar.

Good afternoon friends I wanted to share the first almost finished Buther Board as another Smouldering Rose Barbecue & Dessert Co. Production.

Driving to Calgary one day I had an idea of building a massive Charcuterie Board/ Butcher Block after my Texas trip where everything’s BIG. This is the first one almost finished with a few minor adjustments to be made this weekend. From a piece of of wood, to rough trim and then stained, adding fully removeable magnetic feet for easier storage. The idea behind this is to have one, two, four, six or as many extensions as you want, the count is endless. When having a group of people together for a potluck hand out each board and bring them together for an unforgettable Center Piece that has an individual story for each food event. Or if you have a group of people that comes together all the time bring your own piece and put the puzzle together.

Next week will be long hours trying to get these first 13 finished as #1 will be mine as a reminder of the visions I see in and out of the kitchen.

Good morning Friends I hope everyone is having a Beautiful Tuesday Morning.

December 7th will be the last market for Smouldering Rose Barbecue & Dessert Co. at Medicine Hat Exhibition & Stampede. I was in the kitchen for the last time this year being productive and I will have 5 desserts, these 4 plus the Pumpking Spice Late I didn’t take pictures of. I will have all 4 Rubs, 2 BBQ Sauces , 2 Pizza/ Pasta sauces including the NUGE (Brand New), and the 3 versions of Candied Hot Peppers. The goal is also to have a completed Butcher Block Puzzle Piece as and idea changed the whole plan of convenience for storage of these
15”x20” 1.5” thick Beasts. Thank you Lani Carpenter for the name “Bringing People Together One Piece at a Time”.
