This catering job had me pulling out old French Pastry cookbooks (thank you Thomas Keller), recipe testing and obsessing over the right procedures.
150 chocolate eclairs for a wedding dessert.

I was feeling quite proud until my biggest challenge- transporting them in 32 degree heat. 🥵
