Tuscan Spicy Bean Soup
Ingredients:
1 liter vegetable broth
1 can black beans, drained and rinsed
1 can haricot beans, drained and rinsed
1 can white beans, drained and rinsed
1 can lentils, drained and rinsed
2 cups fresh green beans sliced
1 yellow onion, diced
4 cups diced yellow zucchini
4 cups sliced yellow sweet peppers
3 cups diced green tomatoes
3 cloves garlic, minced
1 tsp chili powder
2 tsp onion powder
2 tsp taco seasoning
1–5 tsp Mexican hot sauce (to taste)
Instructions:
In a large pot, bring the vegetable broth to a boil.
Add the black beans, haricot beans, white beans, lentils, diced onion, zucchini, sweet peppers, green tomatoes, and minced garlic to the pot.
Stir in the chili powder, onion powder, taco seasoning, and hot sauce.
Reduce the heat to a simmer and cook for about 10 minutes, or until the beans are tender and the flavors meld.
Adjust seasoning and spice level as desired.
Serving Suggestion: Enjoy this warming and filling soup on its own or with crusty bread. Perfect for fall!
