Looking for ways to get your kids to eat healthier? Sneak some beets into their chocolate chip muffins πŸ˜‹
Here's a great recipe...

1 3/4 cup flour
1/4 cocoa, sift if lumpy
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon

1/4 cup Butter or margarine softened
1/2 cup granulated sugar
2 large eggs
1 3/4 cup shredded beets
3/4 milk
1/2 to 3/4 cup chocolate chips (optional)

Measure first six ingredients into large bowl. Make a well in the center.
Cream butter and sugar and medium bowl. Add eggs one at a time, beating well after each addition. Add beets and milk. Add to well with chocolate chips. Stir until moistened. Fill 12 greased muffin cups 3/4 full or use liners. Bake at 375 for 18 to 20 minutes or until center comes out clean. Let stand for 5 minutes before transferring to wire rack. Makes 12 muffins. Enjoy!

Here's a great recipe for candied pecans or walnuts. They go great on salads and they are delicious to nibble on by themselves 🀩 I prefer these to stove top, and store bought usually has gluten in them.

Candied Pecans and Walnuts
Preheat oven to 250Β°
One pound of pecans or walnuts
One egg white whipped with 1 tbsp of water until peaks are stiff
Cover nuts with stiff egg whites
Add one cup of white sugar, one tsp cinnamon, one tsp salt
Mix together with nuts until coated
Cook for one hour mixing nuts every 20 minutes until done
Cool and enjoy!
I store these in the fridge and they last for a few months without going rancid
