The perfect Schnitzel has a gap of air between the breading and the meat, it is also crisp on the outside and soft & juicy on the inside.

I love seeing these ripples on the schnitzel!
If you see this, you know it’s done right!

I have had a request for beef Schnitzel.
I have a few extras if you’d like to try,

Just like with my chicken and pork schnitzel, it’s priced by weight, there are about 6 pieces per bag ( starting at roughly $30/ bag)

All the work is done for you , all you have to do is crisp it up in your oven and squeeze on the lemon 🍋

Something you might not know about me as a chef….
I have some local farmers who have found me and bring me their own meat to work with.
Some chicken & beef farmers have been coming to drop off their goods to my kitchen so that I can turn it into deliciousness 😋
So, if you know any farmers, spread the word!

This pasta salad was part of a dinner pick up last night 😋
Here’s what I put in it..
Lots of Arugula
Lots of feta ( LOTS)
Lots of sun-dried tomatoes, roasted mushrooms, peppers, onions
Lots of extra virgin olive oil and Kalamata olives.
I decided it wasn’t enough!
So I topped it with some roasted eggplant !
A sprinkle of pine nuts and a drizzle of balsamic glaze .

I also made a few without the cottage cheese, spinach layer and added an extra cheese and bolognese layer because my oldest daughter doesn’t like it, and my youngest daughter does.
