Watalappam Pot De Crème
Inspired by a classic Sri Lankan dessert, Watalappam pot de crème.
Sri Lankans are known for their sweet tooth. No meal is complete without a dessert. I grew up eating fresh fruit after meals, however on special occasions my mom would buy buffalo curd and treacle as a treat (probably my all time favorite). Second to this, is Watalappam, which is usually served during holidays and celebrations. The origins of this dish points to the Malay community who moved to Sri Lanka from Indonesia during Dutch rule in 1800s.
In our Watalappam pot de crème, we’ve infused the custard with cardamom, nutmeg, added a few spices and black tea, but reduced the typical amount of eggs that go into this classic recipe. The aim is to create a lighter version with a similar flavour profile.
