Spiros, a native Chef of Napa Valley California, moved to Toronto in 2007 and resumed his passion in the food service industry.

In The Bay Area, Spiros owned and operated Speeros Restaurant and Taverna in the Historical Carriage House, Old Town Cafe and Diner and the Boat House Steak House.

Inspired by his previous Chicago Pizza Kitchen in the Hercules, Spiros introduced authentic Chicago-style pizza to the greater Toronto area when he opened the successful Chicago Pizza Kitchen in Vaughan.

2010 saw husband and wife duo Spiros and Helen become pioneers of the Food Truck movement in Toronto. Proud instigators of the amendments to the antiquated food truck laws, the Food Cabbie became the creative culinary outlet for Spiros to better showcase his mouth-watering dishes popular South of the border. 2018 saw the expansion of the Food Cabbie brand with the Food Cabbie Bistro online delivery in Richmond Hill.
