Sous Vide Lamb 💁🏻♂️ ‘Sous vide,’ French for ‘under a vacuum,’ is a French process of cooking lamb in an air-tight plastic bag, fully submerged in a water bath and held at a constant temperature. We marinated 100 lamb chops overnight first in a mint & dill sauce for an event and they were devoured before we could snap a picture of the final product. Kotlet is a delicious Persian version of a crispy meat patty. They can be served warm or room temperature; as is or with bread; for dinner, as a light snack or as a party hors d'oeuvre. We serve ours with a spicy sauce and chives. As a kid, my mom had to hide them while cooking.
