🥂Reflecting on a year if Wine, learning and growth🥂📚

🤓As a seasoned wine educator, I often find myself bridging the gap between a bottle and its story.
Beyond tasting notes, wine is culture, history, and experience poured into a glass, and I get to bring that alive for others! Super proud of my wine courses!

This year brought challenges and triumphs
✨ Finding ways to keep wine education accessible and engaging, blending tradition with innovation.
✨ Tackling misconceptions about wine; it’s not just for the elite, but for everyone curious enough to sip and learn.
✨ Supporting people through their journeys—whether they’re servers, sommeliers-in-training, or enthusiasts who simply love wine.
It’s not always easy. Creating meaningful learning experiences takes dedication, but seeing that aha! moment on someone’s face is what makes this work so rewarding🥹

So, what’s in the glass for 2025?
🌟 My goal is to reach more diplomacy in wine, fostering a community that celebrates wine without intimidation here and in Central America.
🌟 To champion wines from diverse regions—those hidden gems (Croatia, Greece, Austria, Loire & Alsace, Castilla y León, Tasmania, Jerez, etc) and share their unique stories.
🌟 And, of course, to keep learning myself, because as we know, wine is a lifelong teacher (soon to be PWE📚🤞✈️)

🇬🇪 Known as the cradle of wine, Georgian wines don't get the attention and exposure it deserves.
Here's your reminder for all of us wine lovers to always keep some of these unique wines at home/restaurants/bars, especially if you love the stories behind historical regions like this.

🏞️Glekhuri is made in Kisiskhevi, a superior sub-region within the Kakheti area, particularly for Saperavi 🍇
The producer, Teliani Valley is an old winery dating back to the 1800s. This label is super cool and reminds us that "wine is a dialogue between maker and nature".

🍇The best grapes (whole bunches) are selected for fermentation in underground Qvevri 🏺resulting in a structured, remarkable and vibrant full body wine that shows the Georgian core like a dance between clay and grape and skin and song🤎

What a wonderful and inspiring wine!🍷

🤩What is the life of a wine educator/collector without 🏆in their cellar and events⁉️

😊Since my last trip to Argentina, I made sure I kept collecting some of their best vineyards whenever I was able to find them:

🍇Adriana Vineyards Fortuna Terrace, Vino de Parcela (single plots)Because of the freshness imparted by the deep soils and high altitude, these wines have optimal acidity and delicate flower aromas. It is best to enjoy this wine a few years or decades after harvest. 100% Malbec 🍷💜

🍇Nicolas Catena Zapata, became the first luxury cuvée from Argentina to be exported around the world. The wine recreates the “Original Bordeaux Blend” of the 18th and 19th Centuries, when Malbec dominated Merlot and was in equal standing to Cabernet Sauvignon in the Médoc.
This corte is Cabernet Sauvignon - Malbec 🍷 💜

It's always a must in my cellar and I make sure I also showcase it in my wine tastings and classes😻

🕵️‍♀️Plavac Mali grows in the sunny island of Brac in beautiful Dalmatia 🌞
⛰️Dingač is not a grape variety but a micro-location that has become synonymous with the highest standards of Croatian winemaking.
It was the first wine-growing region in Croatia to become a Protected Geographical Origin appellation in 1961.
Today, the wines from this region continue to impress and satisfy the palates of wine connoisseurs worldwide because it's stunning!

🍷This exquisite wine from is masterful blend of rich and warm flavors, including ripe fruit and chocolate, lovely tannins and a sense of perfect balance ⚖️

It's been a moment since I introduced the Wine Consul to the new faces here!👩‍🏫🍷

👋 My name is Ellen originally from El Salvador now living in Canada. I started this account to share my wine stories 8 years ago while I was starting my mobile wine business🍷

😍A rewarding feeling❗🥂

📚I designed this wine program thinking about the way I would have wanted to get trained in wine and to give an opportunity to others to learn while tasting, focusing into experiences to prepare them for a very challenging industry.
An industry that doesn't open its doors easily and where you have to work hard and prove yourself to get the respect you deserve.

🤩I did all that! Happy to help others to open a window of opportunities in the beverage industry and one for myself too despite the challenges, to keep going and getting better as your one and only wine diplomat 😘📚🍷

The Earth does not belong to us. We belong to the Earth 🌎🌱🍷
🎉 I celebrate with a favorite from Catena Zapata. Named after Nicolás Catena Zapata’s youngest daughter, the Adrianna Vineyard is located at almost 5,000 feet elevation in Mendoza.
👩‍🌾In terms of great land for these iconic wines, the soils in this 1.4 hectare parcel are filled with scattered limestone and marine deposits that covered the region millions of years ago.
🌱The name "Mundus Bacillus Terrae" means "Elegant microbes of the earth" and is also the "parcela"name where it is planted in the Gualtallary District,
"Vino de parcela" means that the wine is made from grapes from a single parcel within the vineyard, i.e. single block wines.
🍇Vinification: The grapes are harvested by hand and 75% of the start of fermentation in Concrete (50% whole bunches) and 25% of the completion of fermentation in Oak (just the juice).
🛢️Maturation: 15-18 months in French oak barrels, the treatment of the oak is decided according to the characteristics of the vintage.

💯 A collectible for sure! Tight tannins, great acidity, powerful dark fruit and is the perfect combination for a long time sleep in the cellar🤩 just wonderful❗

🌎Earth day is just a reminder of the beauty of our planet, the art of winemaking and how the water is so important for us and our agriculture.
