Traditionally caviar is a Russian treat of salted eggs from the sturgeon fish from the Caspian and-or Black Sea, however with CAVIARUM itโs a bit different, it starts at being nature friendly and continues at bringing high quality tasty product that is commercially available and appealing to the average consumer. At CAVIARUM we aim to protect the last Caspian and Black sea sturgeon species that have been poached, smuggled and over-fished to the brink of extinction. In the last ten years sturgeon fishing fell under a series of strict international quotas and in 2008 was subjected to a global ban by the Convention on International Trade in Endangered Species. The only caviar on the market since then comes from tame varieties farmed in concrete basins and cages.
At CAVIARUM we eliminated the extensive fishing of Caspian and Black Sea sturgeons and the environmental implications related to sturgeon farming. By using a unique breakthrough technology combined with traditional food related procedures and customs, furthermore, by achieving this culinary level we create a great delicious product that identically resembles the rare Albino, Beluga & Ossietra caviars and the unique and rare snail caviar in egg size, color and intense salty-creaminess with flavor that are deep-fishy and a bit complex that when ate the egg balls pop up in the mouth spreading all these good fishy flavors which makes sense of taste rampage.
