That Canada has an emergency reserve of maple syrup—located in Laurierville, Quebec—that producers can dip into if their own supply runs short? The Global Strategic Maple Syrup Reserve, as it's officially called, is a whopping 267,000 square feet and stores up to 100 million pounds of syrup!

Anyone else like to keep their pantry stocked up Maple Syrup?? 🙋🏻‍♀️

That maple trees live between 100 and 400 years, depending on the species? A red maple typically lives from 130 to 300 years. A silver maple only lives for about 100 year. The sugar maple has the longest life span, usually living between 200 and 400 years. Some have been tapped for as long as 150 years!

that a barrel of pure maple syrup can be worth up to 30 times more than a barrel of crude oil? Of course this fluctuates depending on the price of oil, but in 2021 a barrel of maple syrup was worth about $2300 CAD. By comparison, a barrel of crude oil is currently sitting at around $135 CAD. No wonder it's known as liquid gold!

🍁Maple sap will change in flavour as the tree starts to "wake up". This happens when the weather stays above freezing overnight. With the warmer weather finally here (and hopefully to stay!) trees and flowers are starting to bud and bloom🌱🌷 signalling the end of the Maple Syrup season!

Hello February! Sorry we have been absent here, not sure if it was just us but January was just a kick in the a**; omnicorn, lockdown restrictions for the hospitality industry, Betty White passing! ...those snow days were nice though😌

Now on the neat stuff! February marks the start of Maple Syrup season in Ontario? Some areas may start sooner but by mid February, Sugar Bushes are busy tapping their trees, checking lines and clearing away any fallen branches or brush. This can take 3-4 weeks to complete when your setting up 15 000+ taps! It's important to get this done before the weather warms. Because once the sap starts to flow, it's GO time!🍁🥞

Maple Syrup: A Canadian Love story

Our Maple love story started at the age of 3, when as a new Canadian, went to visit a traditional Cabane à Sucre - Sugar Shack - in Montreal, Canada. It was truly love at first sight. The aroma of the boiling maple syrup was intoxicating. Cooked maple syrup was being poured, like melted Gold, on a white bed of snow. The taste was unlike anything else. Not sugar, not honey, not candy, but delicious, buttery, MAPLE flavour! A flavour unlike anything else in the world. This is why we use 100% pure Maple Syrup for our taffy, because there is no substitute for Maple. No Aunt Jemima, no corn syrup, no refined sugar - just pure, honest-to-goodness Ontario Maple syrup!

Many of our clients have similar childhood memories and feel immense joy when they spot our catered station. Being able to do something this special, bringing the outdoor Northern experience, inside and year-round, gives us a great sense of pride. Pride in being able to share this rich cultural experience, not only with locals, but those visiting from across the pond or overseas.
