These little beauties are our newest dessert special; a s'mores chocolate mousse pie.

A crisp honey-graham cracker crust; filled with decadent belgian chocolate mousse made the old-fasioend way with eggs, real chocolate & cream; then topped with marshmallow creme flambe for that authentic taste of summer camping!

We've been busy baking this week! These little beauties are one of chef's personal favorites; fresh fruit galettes.

For those not in the know, the original gallette (sometimes called a fruit blossom) is made with sweetened butter pastry with fresh fruit jam placed in the center.

You then carefully cut and fold the edges over to make the signature flower shape and sprinkle with unrefined cane sugar. The cane sugar caramelizes during baking and adds an exquisite flavour to the pastry.

These are some of our Jambon 'd Chaumiere (country-style French ham) sandwiches. The recipe was inspired by a rustic French salad that included beets and Arugula with a lemon, balsamic dijon dressing.

These beauties combine thyme & tarragon seasoned ham, swiss cheese, arugula, red onion & pickled beets with a fully emulsified version of the lemon-balsamic-dijon dressing using our signature technique to make any vinaigrette dressing into a thick, creamy sauce.
