Fleur d’Aunis, hails from the Loire Valley’s in France. It’s bathed in a cognac-fortified aperitif and lightly brushed with fleur de sel water. The salt re-crystallizes on the rind, adding crackly texture to the soft cheese. Its flavor profile is meaty, buttery, and briny with tangy, nutty, fruity, and smoky notes, finishing pleasantly. A lovely cheese for aperitifs.

It pairs wonderfully with Pinot Noir and fresh fruit.

Beemsters XO, aged for 26 months. This matured variety features the same sweet caramel sweet flavour as its younger version, but also develops deep, long-lasting flavours of butterscotch, whiskey and pecan. A favourite of ours and platters.

We just opened a small amount of Cave Aged Gruyère

As Gruyere cheese ages, its flavour intensifies, becoming sharper and nuttier. Known for its complex profile, it offers a delightful balance of nuttiness and creaminess. With a firm texture and pale yellow hue, it features small holes and a distinctive aroma evoking toasted nuts and caramel.

It’s the perfect hard cheese for a platter or for an especially tasty grilled cheese or melted top to your favourite cheese dishes.
