Cava matches champagne in many ways, often for a fraction of the price.
Cava is Spanish sparkling wine. Cava is made the same way that Champagne is produced, but with different grapes.
3 major grapes used in the blend are Macabeu, Parellada and Xarel·lo
Macabeu is a simple, light floral grape with a lemony flavor with a slightly bitter finish that tastes similar to green almonds. Xarel·lo with rich floral note of which contribute to its aroma. Paralleda, is blended for its ripping high acidity and zesty citrus flavors.
Cava is usually not sweet with a tasting profile very similar to non vintage champagne. But much cheaper :)

Prosecco rose - the fashion of Romance
Prosecco rose is a new memeber of the family, landed in 2021 with a DOC title.
Before 2021, there is no prosecco rose, only white prosecco and pink sparking wine. Prosecco rose DOC as a brand new designation means that producers must follow specific rules around production, sales, as well as pass quality control.
Though all sorts of red grapes have been used in the past to make sparkling rose. Prosecco rose can only use one red grape in the blend - the most ever elegant high maintenance Pinot Noir. Which will add depth to the Prosecco’s airy Glera - the blend has to be 15% Pinot Noir and 85% Glera.
Another major difference is longer fermentation time. All prosecco is made by charmet method (aka method italano ) with 2nd fermentation is stainless steel tank. Normally it takes 30 days, but for Prosecco rose it has to be minimum of 60 days, and lots producers chose to be even longer.
Longer fermentation brings layered flavor, vibrant color, and delightful silky bubbles to the wine. Prosecco Rose is fuller bodied than most other proseccos; dryer and more textured than average rose sparkling; yet still refreshing.
Like any other Proseccos, it matches with almost any food, even red meat. Its subtle touch of tannin and finer lingering bubbles give you more reason to pop it up for all occasions, anytime during the day. 😉
Our new prosecco rose here is a millesimate ( vintage ) prosecco; which implys a one step higher quality - all grapes used to make this wine must come from the same vintage.
Prosecco is the most romantic bubbles in the world, we must admit, as all prosecco by law has to be produced in Romeo and Juliet's hometwon veneto, especailly if it is pink :).

Basically, the fuller your wine is, the harder your cheese should be :)
For crisp light whites with sharp acidity. Choose goat cheese and other soft cheese .
Sparking wines, Prosecco, cava, champagne. Soft and creamy cheese
Full bodied whites - semi soft cheese. Emmenthal, Gruyère and Comté. As most full bodied white wines are fermented or / and aged in oak barrels. This type of cheese usually has nutty flavors that pair well with the creaminess of the oak aromas in the wine.
Aromatic white wine with a hint of sweetness, Moacato, Riesling or Gewürztraminer. Choose pungent cheese - stinky cheeses require wines with acidity and a hint of sweetness to balance the strong flavors.
Light-bodied red wine - semi soft cheese. Pungent (sticky) cheese also works well.
Medium / Full-bodied Red wine. Go for hard cheese - they usually have salty and savory flavors that pair wonderfully with rich red wines.
Sweet Fortified wine, Port wine or a dessert wine like Sauternes, Tokaji. Always pick their best friend blue cheese
If you having a cheese board with all sorts of cheese. It is always a good idea to pick fruity, light red wines. Barbera or Pinot is a good option to consider.

Malbec the legendary Argentina black wine
Hey everyone, Today is international Malbec Day, Argentina’s most celebrated Grape variety.
Thanks to its high altitude, mountain vineyards with the most preferable rocky soil. Argentina Malbec possesses a rich, vivid, very full bodied, 3 dimensional profile.
As in Argentina, most vineyards are high altitude mountain vineyards with longer sunshine hours, dramatic temperature differences between day and night- these helps a great deal for the grape to reach its premium maturity with higher sugar residue, which contribute to higher alcohol, fuller, more complex profile.
And Its rocky thin soil is especially great for vines. Different from most other crops, thin soil will encourage the root system to grow, provide great drainage, result in more concentrated, less waterly fruits.
Plus Argentina vines drank the purest water of all, melted mountain spring water from the snow peaks

Legend has it that it was Dante Alighieri, the famous poet once was a guest at the Castello Scaliero to give the name “Soave”to the town by virtue of its delicious wine. In the ancient latin language Suavis means sweet and pleasant.
The region Soave only make white wine dominated by Garganega. And the Soave we have here is the King’s Soave - Soave Bertani.
The wine has been mentioned at numerous literature works
Quanno bevo er Soave de Bertani，nun penso piu ne' a ieri, ne'a domani.
It means when I drink Soave Bertani I will forget the pass, wont worry about the future.
Hemingway also like this wine very much, in 1950s sitting in his favorite wine bar The Gritti Palace in Venice, he always order Bartani Soave. It later on appear in his novels many times.
Bertani Soave has been called as the king’s Soave -
Bertani Soave is awarded with royal emblem by Soave royal family on 1923, it is the very few wines allow to carry a royal emblem on the label.
Bertani Soave was chosen in 1937 to be the only white wine served at the coronation ceremoney of George VI King of England.
It is made, and bottled exactly the same as in 1930s
40% grapes is pick in September with traditional fermentation without skin contact, the remaining 60% is hand picked in October, fermented on the skins as they used in 1930s.
Aging on concrete vats for 12 months.
Rich nose of peach, pear apricot and goose berry. Sapid mineral palate, soft and lingering at the same time, a white with great personality and complexity.
Just like its name says, Soave is the smoothest wine in Italy.

A very special red wine variety thriving in Campania region of Italy, Where lies 50 ancient volcanos,its soils extremely rich in mineral nutritions - which lead to a very special profile of the wine, Aglianico has a very special savoury taste which lead to clear layers of complexity, jammy, juicy but with more meaty, game flavors
As a region, Campania is very little to be known. Not because their wines aren’t good enough. The major reason is it is a very, very small region, which only apply for 2% of the vineyard coverage in Italy. It simply doesn’t have much to share with the rest of the world.
Here we have Mastroberardino Irpinia Aglianico DOC. The wine will impress you with its stunning expression. Plus the Southern Barolo - Taurasi. It is hard to stop drinking it.
If you prefer your white wine to be more salty mineral than sharp and fruity. I would highly recommend their white wines too. Falanghina, Fiano, Greco de Tufo

Pinotage was born in 1925 with the effort of Dr. Abraham Perold, professor of Viticulture at Stellenbosch University, as a cross between Pinot noir and Cinsaut, ‘Pino’ is fairly obvious, but ‘tage’ comes from Cinsault’s name in South Africa, Hermitage.
As most of the great things take times to come, it wasnt until few decades after in 1950s, Pinotage finally start to make its appearance in the world.
Pinotage is an exceptionally fruity wine with immerse character, if it is aged or fermented in oak barrels, it will develop delightful aroma and tastes of coffee and chocolate, of which makes it deliciously famous 😋

Champagne, as the most luxurious sparking wine from France, has many siblings in the world.
Only sparking wines made by the time and effort consuming traditional champagne method with 2nd fermentation in the bottle, in champagne region of France can be called as champagne. Other than that, they are just sparking wines.
However, in order to differentiate the champagne method sparking from the rest of the sparkings, different countries has different names
In Italy we have Franciacorta, in South Africa we have MCC, In Spain we have cava, in Germany, Sket.

What is nature wine? Nature wine is the most naked, unfiltered version of what we know to be wine, with very little to none chemical and additives.
But over the years it is really a double bladed sword. Due to its lack of preservatives it is generally recommended the wine to be consumed within 6 months after production. However as we live in China. This is hard to achieve imagine the long logistic journey and way to much middle men. Most of time when it get to you. It is already past the 6 months period.
