This new dining spot specializes in spare ribs, offering patrons the chance to carve the meat themselves. They aim to revamp the rib's image in the culinary scene, recognizing its historical relegation to beer garden sidelines and as a mere sauce base in upscale eateries. Over three years, Haake and Schlereth meticulously sourced high-quality meats and perfected recipes for their spare ribs. Marinated for days and slow-cooked for up to 24 hours, the ribs emerge tender and flavorful, featuring a blend of pork, beef, and veal. The menu includes diverse options like salad bowls, pinsa, and a "Prime Sandwich." A unique creation, the "Crispy Spareribs-Cheese Balls," adds flair to their offerings, aiming to fill a gap in Munich's culinary landscape. Living Hotels, mindful of environmental challenges like declining air quality and rising sea levels, integrates sustainability and social engagement into their core values. Partnering with Green Globe since 2017 for sustainable tourism, they received certification for nine hotels in 2018, followed by the rest in 2019. Their collaboration reflects their belief in the power of partnerships to enhance outcomes. Living Hotels sees sustainability not as an optional endeavor but as an integral aspect of their commitment to the planet and its communities.
