It's time for TexMex! Our tamale pie is one of the most frequently requested dishes so we're bringing that to you on this menu: seasoned ground beef, black beans, corn baked with our zesty homemade Rotel. Coleslaw turned TexMex is the perfect, cooling side with a serving of the casserole. Finish your meal off with our Mexican Wedding Cookies: two-bite walnut shortbreads rolled in powdered sugar.

Three brand new recipes are on this menu. We've seen some beautiful butternut squash so we're roasting it with fresh garlic cloves then turning it all into a creamy pasta sauce with bits of squash for texture. Tomatillos continue to be available so we're going to roast these with onion and jalapeño as we normally do, but instead of a sauce on a casserole, they'll be blended into a base for a hearty and zesty chicken stew. The sweet is a twist on our luscious cheesecake. We're adding coconut and pecans to make it an Italian Cream version.

Chicken Tomatillo Stew: $8/lb (2-3 servings)

Yesterday really was great. Two lemon crumb cakes proved not to be enough. Neither did 18 Easter Bunny Strawberry Shortcake Trifles nor a full pan of Chocolate Frosted Fudge Poptart Bars.

What will we come up with for the next Gran Feria Sabatino's on Saturday, April 6? Not sure yet, but we've got some time to think about it.

We'll see you at Cuenca's biggest and best weekend feria in three weeks. Take good care of yourselves!

It was another great day even if Pachamama forced us to shut down a bit early. That was quite the downpour yesterday afternoon! Thanks to everyone who came out.

We're looking forward to seeing you again in two weeks. (Plan accordingly because there are FIVE Saturdays in March so it will be three weeks after this before the next Gran Feria Sabatino's in April.)

We're already coming up with delicious ideas to celebrate St. Patrick's Day, and we may surprise you with a few Easter-themed treats. So stay tuned!

The rain held off most of yesterday, and then did it ever let loose! Many of our vendors had already started packing up because plenty of you came out to buy up their product. Thank you!

**Menu for the week of March 4**

This menu brings back our Hot Chicken Salad. This version is hot--as the name suggests--but slightly less tangy and oh-so satisfying. It's a creamy, cheesy dish that can be low-carb without the buttery cracker topping. Just ask us to leave it off when you order. The soup is a hearty, vegetarian Italian-style white bean soup with the added tang of lemon and little bits of pasta. For this menu's sweet, you'll be tempted by soft and chewy blondies with the flavors and textures of Hummingbird Cake: banana, pineapple, coconut, and nuts. We're leaving the icing off to let the other flavors shine through.
