First outing of my new autumn/ winter menu last night.

15x Butterflied gambas with Asian green mango slaw

13x Roasted fillet of Galician beef with a port wine reduction, dauphinoise, vegetables

2x Baked salmon, with a brown butter and lemon sauce, same sides as the beef

15x Cheesecake with mixed berry coulis

It's the 1st of November, the Christmas decorations etc are appearing in the shops now and I've just seen the first Christmas TV adverts of the season!

If you're hoping to have me cater for you in the run up to Christmas, be it a party or a private dinner party, please don't wait to book. My available dates are limited already, so get in touch sooner rather than later to avoid disappointment.

Back in La Herradura tonight after a crazy day and night of storm Dana. Glad to say this evening is much calmer!

We served 3 canapés: onion bhaji with mango chutney and coriander; garlic cream cheese stuffed mushrooms; truffle cheese croquetas with allioli and black garlic pearls.

Starter: Caramelised goat's cheese bruschetta, caramelised apple, onion marmalade, walnuts, rocket / bruschetta with tomato, basil, garlic and olive oil.

Main: Baked salmon fillet, pommes Anna, roasted asparagus and green beans, creamy tarragon sauce / Roasted butternut squash risotto with parmesan and truffle oil

Dessert: Rich brownie with vanilla ice cream

Tonight we also set and decorated the table for the clients.

⭐️New and exciting cooking masterclasses now available!⭐️

On Saturday I did something new, it was a lot of fun! An interactive barbecue masterclass, a surprise birthday gift.

The clients have a beautiful new barbecue in their lovely Spanish home, and so the brief was to gain more confidence in preparing and cooking some more exciting dishes made with ingredients which can all be sourced locally.

The chosen menu was:

Marinated skirt steak with peppercorn sauce

Chicken Sosaties

Whole Corvina

Honey and mustard new potato salad

Asian slaw

Elote salad

Sun dried tomato garlic bread

The entire meal was prepared by the clients and myself, with me sharing my recipes (although do expect approximations because I don't really do proper measurements! 😅), my tips, methods and answering any questions they had.

It was such a great success that I am now adding this to my services.

It would make a great gift for a keen cook looking to expand their skills and knowledge, especially with Christmas just around the corner. Tonight we cooked for 4, the lovely Louise Goodhind was the winner of my raffle prize for the fundraising event held for Skatz a couple of months ago. Even the gorgeous Sprout got a share... how could I not?!

Menu:

Butterflied gambas with mango, avocado and coriander salad, Asian dressing

Pancetta wrapped pork fillet sweet potato mash, Málaga wine and orange sauce, French beans and asparagus

Decadent chocolate brownie with vanilla mascarpone and honeycomb

Tonight we were back at the lovely Villa Valdiego in La Herradura cooking for a family of 7.

4 vegetarian and 3 fish eaters.

Starters:

Burrata salad with rocket, roasted and marinated cherry tomatoes, pine nuts, homemade fresh pesto dressing

Butterflied gambas with avocado, mango and coriander salad, with a hot, sweet and sour aromatic Asian style dressing

Mains:

Griddled aubergine rolls stuffed with jewelled couscous, roasted red pepper hummus, yogurt and mint sauce, sumac

Baked cod with homemade romesco sauce, olive dressing, garlic and herb potato stacks, griddled asparagus

Dessert:

Chocolate and dulce de leche croissant pudding with cream.

I forgot to photograph the pudding all plated up!

Wow! 1st October already. September was an exceptionally busy month for us, we have worked out that in the last 30 days we have prepared 💥1,931💥individual dishes/ servings plus 75 cocktails for our clients, no wonder we're shattered!

Last night was the last night of work in what has been an exceptionally busy month for us. We are so happy with all the feedback we've received over this month. Now we're going to sleep for a week and repair our tired bodies and minds, ready for the next month.

I didn't catch photos of every single dish or the cocktail tonight, but here are the photos from the penultimate dinner for these wonderful guests.

A family style affair, starting with a passion fruit caipirinha, with the following canapés: Tajín spiced prawn, guacamole and pico de gallo shots; steak profiteroles with mustard cream cheese and rocket; tuna tataki.

Main course:
Barbecued boneless rib of beef
Baked rosada with pil pil sauce
Roasted med veg
Championes al ajillo
Green salad
Warm panecillo bread rolls

Dessert:
Eton mess with local mangoes, vanilla cream, passion fruit purée

It was a little breezy tonight and all the little candles refused to stay alight!

Dinner number 2. This group of guests are excellent and an absolute joy to cook for!

Cocktail was a British Virgin Islands rum punch.

Canapés:
•"Fire roasted" tomato, basil and mozzarella crostini
•Profiterole filled with smoked salmon, horseradish cream cheese, cucumber and black garlic pearls
•Beef albóndigas with rich tomato sauce

First night cooking for a really lovely group of 15, visiting from the US... I can tell this next week is going to be fun! Had one of my favourite reviews yet of one of my dishes (the cheesecake), "that was f♡$*ing spiritual"! 😂

We are providing a full table setting service for each evening meal this week, along with speciality cocktail and canapés. Tonight's menu can be seen in the photos below, the canapés and cocktail are described under the photos (although I was too busy to grab a photo of the tuna stuffed piquillo peppers!)
