When cooking I love to use unusual flavor combinations and see my guests’ eyes light up with amazement.

This happened last night with this dish with a new love I have discovered: artisanal Miso. You’ll see a lot more of this and other fermented foods from PCM in 2023!

As a private chef, you develop your own repertoire and this will always include a “go-to” dish, or something in your back pocket you can use in any situation and it will silence the table…except the sound of spoons scraping the dish to get every last morsel.

For me, this dish is Chawanmushi. It’s comfort food that can adapt to the seasonal fare in the markets. Anything goes. But when that dashi flavored custard hits your lips, you beg for more. You wish you didn’t eat it so fast. And then you realize why you have hired a private chef to stimulate your every desire for delicious food. It was a good decision 😉

A lot of you have been asking about the Prawn Panna Cotta on my plateau de mer.

It was a 1st for me to do a Seafood Panna Cotta and what better Seafood to use than the local Prawns from Sóller 🦐

In this dish all of the prawn was used, including the shells to maximize the flavor.
