Been a while since I’ve shared some recipes with you all, using herbs and spices available from Coq d’Or. Today I’ve got a really tasty curry, Chicken Chasni, a simpler version that anyone can make and sure to impress your family. Next, a little more complex … a Bhindi Masala.
Hope you enjoy having a go ###

CHICKEN CHASNI … serves 4

300g chicken breasts … cut into bite sized pieces
2 teaspoons Tandoori Garam Massala
1 teaspoon of salt
1 teaspoon garlic paste
1 teaspoon ginger paste
1 tablespoon lemon juice
2 tablespoons oil or ghee
1 onion … diced
1 tablespoon garlic paste
1 tablespoon ginger paste
1 teaspoon cumin
1 teaspoon Kashmiri chilli powder
1/2 teaspoon turmeric
200ml chopped tomatoes or passata
1 tablespoon mango chutney
1 tablespoon mint sauce
1 tablespoons tomato ketchup
200ml chicken stock
100ml double cream
1 tablespoon lemon juice
Salt and pepper to taste
1 tablespoon fenugreek leaves

Marinate the chicken pieces in a little salt, a tablespoon of lemon juice, 1 tsp of both garlic and ginger paste and two teaspoons of Tandoori Garam Masala. Leave for about half an hour.
Heat the oil in a balti pan or wok over medium high heat.
When the oil begins to bubble, throw in the chopped onions and fry for about five minutes.
Add the garlic and ginger paste and allow to fry for a further minute.
Stir in the cumin, turmeric, Kashmiri chilli and fry for a further minute followed by the tomatoes or passata.
Put the onion mixture in a blender with the mango chutney, mint sauce, ketchup, and the stock.
Blend until very smooth. You don’t want any chunks in this sauce.
Meanwhile wipe the pan clean and add a drop more oil into it if needed.
Add the chicken pieces and brown them for a couple of minutes and the top with the smooth curry sauce sauce.
Then add the double cream and fenugreek leaves. and simmer for a further few minutes until the chicken is just cooke thru.
Season with salt and pepper to taste, squeeze the lemon juice over the top and garnish with fresh mint (if available) .

BHINDI MASALA

2 tbsp oil or ghee
450g okra (chopped into small circular discs)
1/2 tsp. black mustard seeds
1/2 tsp. fenugreek seeds
1/2 tsp. nigella seeds
1/2 tsp. ground fennel seeds
1/2 tsp. coriander seeds
1 -3 dried whole red chili
1 onion … chopped
1 tbsp garlic paste
1 tbsp ginger paste
2 - 3 fresh chilies, finely chopped
2 medium tomatoes … diced
1 tsp mango powder
3 tbsp grated coconut
1 fresh lime (for cooking, and save some for garnish)

Heat the oil in a pan over medium high heat. Stir in the chopped okra and fry until tender and beginning to char a little. About five minutes should do the job. Transfer to a plate with a slotted spoon.
Now add the mustard seeds to the pan and when they begin to crackle, stir in the fenugreek seeds, onion seeds, ground fennel, coriander seeds and dried chillies. Stir and then add the chopped onion and fry for about 5 minutes or until soft and translucent.
Now add the garlic and ginger paste and fry for a further minute.
Sprinkle in the mango powder, coconut, green chillies and chopped tomatoes. Bring this all to a simmer and then add the cooked okra. Squeeze the lime juice over the top and serve, garnished with a few lime slices.

Enjoy your curries with rice, chutneys and fresh naan or chapatis.

‼TANDOORI GARAM MASALA ‼️

Coq d'Or's unique blend of 17 herbs and spices, freshly toasted and ground today.
Unlike many mass produced blends it does not contain any salt, which is often added to bulk out masalas and commercial spice mixes. No preservatives, additives or citric acid...contains mustard.
This masala can be used in marinades with yoghurt or oil, dry rubs for the BBQ or add to your favourite curry sauces for that extra flavour burst near the end of cooking.

Supplied in a cellophane packet, for practicality, which we advise you decant into a glass container and store away from sunlight. It is recommended that fresh spices should be used within 6 months for optimum flavour.
