I was listening to a short message from earlier today about creative power that really rang true to me. He said that “dedication is love” and that “creativity takes you out of time.” I sat with those two phrases for a moment thinking about the “flow” experience of the imagination. How you can start with a hint of inspiration, and as you work, the vision grows and evolves until you can find yourself in a flurry of emotions and thoughts in all shapes and sizes. The idea of giving yourself to something. Dedicating yourself.. Allowing the space to grow, to reflect, to vibe, to create. I’d like to echo his message, and encourage everyone to give themselves that time to imagine. Who knows where the creativity train will take you. 😘

Do you have a good sauce ? Sauces, herb oils, vinaigrettes.. they make a BIG difference when you’re cooking. Here’s a quick recipe for a chunky herb oil that I like to use on my roasted vegetables.

RECIPE ❤️‍🔥
Handful of herbs: parsley, mint, cilantro, dill (whatever you have on hand), chopped
1/4 red onion, thinly sliced
1/2 cup olive oil
1 garlic clove, grated
Pinch of salt
Pinch of red pepper flakes
1/2 lemon, juices

Add all the ingredients in a small bowl and mix to combine. The flavours will deepen with time.

This is a geat way to add flavor to roasted vegetables, sandwiches and even soups.

Quinoa is a superfood, a powerhouse of nutrition containing all the amino acids (the building blocks of protein), which makes it a complete protein. Packed with fiber, quinoa is excellent for gut health, is naturally gluten free, and contains disease fighting antioxidants which can help reduce inflammation in the body !

Here is a simple quinoa recipe to get you started for the week.

Quinoa taboulé
500g quinoa, cooked
1/4 cauliflower, grated
1/2 red onion, thinly sliced
1 lemon confit, seeds and flesh removed, skin chopped
Handful of radish, thinly sliced
Thinly chopped chives
Salt pepper
Finish with favorite vinaigrette

In a large bowl, combine the quinoa, cauliflower, lemon, onions, radish, herbs. Season with salt and pepper. Add your favorite vinaigrette.

One of my favorite vinaigrettes for this recipe :
1 teaspoon garlic, minced
2 teaspoons shallots, minced
3 tablespoons lemon juice
1/4 red wine vinegar or white balsamic
1 cup olive oil

Tip * don’t overlook the quinoa. Set a timer for 10 minutes and check the quinoa every 2 minutes after that. Also, don’t forget to salt the water. I usually add salt half way through the cooking time: minute 6.

* Dress up your quinoa salad with whatever you have available. Top with roasted carrots, marinated tofu, sweet potatoes, etc. Make it unique to you ! 🧡

It’s fire cider time !!🔥

I make this concoction every season when the cold settles in and we start feeling under the weather. We’ve actually become quite addicted to it ! A healthy immunity tonic that’s easy to make and really helps fend off sickness !

Recipe for the remedy :
1 red onion, minced
1/2 cup grated horseradish
1 head, minced garlic
2 inch piece, minced ginger root
2 inch piece, minced turmeric root
1 chili pepper, sliced in half for 🔥
2 tablespoons dried thyme
1 teaspoon peppercorns
1 lemon, sliced
1/4 cup raw honey
50 cl raw unfiltered apple cider

Place all the chopped ingredients in a jar. Add the spices. Top with honey. Fill the jar with vinegar. Reserve for a minimum of 2 weeks. Filter. Keep in the fridge. Take 2-3 tablespoons per day depending on how you feel !

Soupe season has arrived !! Gather your root vegetables, sprinkle your spices, and simmer into warm bliss !

Below my recipe for sweet potato soup ! 🧡

2 sweet potatoes, peeled and cut into cubes
5 carrots, peeled and chopped
2 onions, peeled and sliced
1 butternut squash, peeled and cubes
Inch size piece of ginger
Inch size piece of curcuma
Olive oil
Salt and pepper

In a large pot, heat the olive oil. Add the vegetables and sauté for 5 minutes. Season with salt and pepper. Cover with water. Bring the soup to a low simmer and allow to cook for 45 minutes. When the vegetables are tender, the soup is ready. Pour little by little into a blender. Blend until smooth. Taste and adjust seasoning if needed.

I know I’m slightly partial to this place, but in 5 years I have seen the lunch orders grow from at best 20 to 120 per day ! I’ve seen our catering branch crumble during Covid only to rebuild itself more efficiently and deliciously in a new offer : the KEÏLI DAILY. When we made the decision to go 100% vegetarian, it was scary. Vegetarian food can mean a lot of things to a lot of people. I’ve always believed that food is a personal journey that is unique to our uniqueness ! By transforming KEÏLI into a vegetarian restaurant, I wanted to propose more veggies not preach more veggies.
Our menu is small. It’s honest. It’s gourmand. It’s healthy. We welcome with smiles because we love being here with you. You are our raison d’être !! Thank you for eating more vegetables with us.

The perfect back to school energy snack ! Energy balls are a great way to integrate more nuts and seeds into your diet. Make a batch and store them in the fridge for up to one week ! Kids love them too !

Recipe: 10 energy balls

30g almonds
30h hazelnuts
1 teaspoon sesame seeds
1 tablespoon dried coconut
160g dates (pits removed)
120hg dried apricots

Topping:
1 teaspoon sesame seeds
1 tablespoon dried coconut
1 teaspoon matcha ( preferred)

In a small bowl, combine the ingredients for the topping : coconut, sesame and matcha. Set aside.
In a food processor, mix the almonds, hazelnuts, sesame seeds and coconut for 30 seconds until they’re a fine powder. Be careful not to mix too long, the nuts will turn into a purée otherwise !
Cut the dates and apricots into small pieces. Add them to the food processor. Mix a few times. The mixture should be smooth and sticky. Form the mixture into small balls about 30g and roll the balls in the coconut, sesame, matcha mixture.
Keep in the fridge, and enjoy whenever you need an energy boost !
