Ok, cooking classes!
This is something that should have occurred a long time ago but restrictions etc have put a number of projects on hold, these classes will only occur when we are safely and legally able to do so and even then any safety precautions that are advisable will be in place.
I spent 26 years in the UK as a chef with half of those as a head chef, I have had an AA rosette and had responsibility for a number of new projects over the years.
I then spent 6 years as an NVQ Assessor/training advisor/mentor for two national training companies, during that time I guided people through their level 2 and 3 qualifications plus upskilling them in Maths and English, I worked with national chains (Marstons pubs, Mitchells and Butlers, Marriots etc) as well as many independent establishments from Cafes to fine dining.
Was it hard, yes at times, did I enjoy it, immensely!
I like imparting skills and learning, there is much to be said for the phrase "Can't cook won't cook!" even from people in the catering business, having someone boost your confidence, show you what you can achieve and give you due credit is often all you need to excel!
Enough about me, lets get to the nitty gritty!
Classes will be no more than 4 people at a time.
They will take place in my Gite.
They will be approximately 3 hours in duration more or less.
They will cost 30 Euros per person.
There is ample parking.
Tea, Coffee and soft drinks will be provided.
You will not gain a qualification from this, these classes are also going to be held in a normal kitchen, I mean this is where I assume most people end up cooking so showing you it can be done at home is the main point!
The suggested classes at this time will be. . . . .
Basics, how to identify and use kitchen equipment safely, how to prepare vegetables and the common cuts, effective shopping/menu management, food safety do's and don'ts.
Potatoes! The humble spud, the cornerstone of many dishes, from chips and something fancy, we'll explore a number of different dishes suitable as sides or in their own right.
Poultry! You can buy legs, breasts etc but do you know how to take one apart? I'll show you then we'll cook it in a number of different ways.
Soups and sauces, a couple of basic soup preparations, how to make a stock and a few simple but practical sauces that once learned should keep you going forever!
Fish! We'll start with a whole fish and break it down into different cuts then cook it it a few different ways.
I will also give kitchen hacks and ideas on how to plate things to give you that restaurant feel, every chef starts somewhere you just have to practice!
Anything that is prepared during these classes you are welcome to take away with you.
Any suggestions for class subjects I'm happy to listen to!
Thats it, once we are reasonably restriction free these will be up and running, any questions please feel free to ask!
Thank you!
