Well, how confusing. I’m a day late for National Pie Day which was celebrated in the USA yesterday. But apparently here in the UK we have a whole Pie Week in early March! Whatever, today seemed like a good day to make some pies. The bigger one is chicken & leek. The small ones are steak & mushroom.

One of my lovely regular customers asked me recently if I had ever heard of Mature Plum Cake.
A quick google revealed that it is a Keralan style Christmas cake with fruit & nuts (raisins, figs, prunes, dates, dried apricots, cashew nuts) soaked in plenty of rum for as long as possible.
I made one for my customer, but couldn’t resist making a small one for the family. What a delicious cake!!!! Spicy & rich.

Trial run of an addition to the Winter menu - little duck canapes; crostinis topped with duck liver pate, a slice of pan fried duck breast, clementine & rocket with a clementine dressing. Delicious!

August has been a busy month! Which is why I haven’t posted anything for a while. Among other things, we have been part of a Presidents Day lunch at a cricket club, a wedding celebration, a christening, some birthdays and a wedding anniversary. These pictures are a couple of components of a sharing platter - marinated mussels and a lovely salmon & asparagus terrine.

Busy morning! Exactly 24 hours between first contact with the customer and delivery of a special order of 100 assorted cupcakes. Thanks Mumsbakecakes for another corporate order! Flavours included lemon (with homemade lemon curd), red velvet, ‘Victoria’ and Black Forest + some vegan carrot ones and some gluten free chocolate ones. Oh, and also a lunch for 11 was made and delivered.

Trying out some ideas for a posh picnic. These are rather yummy - crostini topped with ricotta, prosciutto & griddled nectarine.

Is it a pudding or is it a cake? Meringue ‘cake’ - three layers of meringue, with lots of cream, raspberries, strawberries, raspberry coulis and topped off with some mini meringues.

More ‘menu development’. I’ve been experimenting with Nepalese themed canapés for a possible booking later in the year. Absolutely delicious, fresh vibrant flavours. I found some ideas that included Aloo Sandekho - little roasted potatoes filled with a mixture of tomato & potato that is spiced with cumin seeds, shallot, turmeric, fresh chilli & coriander. Chicken ‘Sekuwa’ - croustade made with chapatti, loaded with chicken in a spiced yoghurt sauce. And then we have Prawn ‘Achar’ - crunchy cucumber cups filled with chopped prawns pan-fried with ginger, chilli, garlic, more cumin, and shallot.

Things are pretty quiet during lockdown, but it’s a great time to experiment with new recipes. These chicken wings with sweet soy & burnt lime butter are delicious and will definitely be added to the repertoire!

It’s Australia Day tomorrow. I thought I would post a picture of some Lamingtons, made the other day. Lamingtons are a slightly retro Aussie specialty - light cubes of sponge, dipped in chocolate icing and then rolled in desiccated coconut. According to an article I read recently they are going to be popular here!

Small gatherings have been popular recently, especially as the warm weather means they can take place outside. What could be better than some delicious cold food to help things along? This lunch included baked salmon, Spanakopita, Greek style salad and a barley & squash salad. Then mini desserts - brownies, limoncello tarts and fruit skewers.

I haven’t posted anything for a while as I’ve been having a new kitchen installed (big shout out to Eco German Kitchens). Had to try out these mini treacle tarts today. Crisp sweet pastry with a lovely ‘not too sweet’ filling. (Nigella Lawson’s filling recipe)

Picnic boxes are the perfect way to serve a meal without guests getting too close to each other at a buffet table. We delivered some yesterday for an outdoor celebration. Each one contained a selection of wraps, ciabatta rolls and baked goods including a slice of pork & chicken pie. Vegetarians had a different selection. There was lemon drizzle cake and chocolate brownies too.
