After a hectic and mad weekend we are back with our Monday menu. This week we are going to take you to the centre of India, MADHYA PRADESH.

This region is known for a very famous place like Khajurao temple and Indore. During the reign of Hollar Gharana the Cuisine of Madhya Pradesh had a bit of French and British influence as the Maharajah of Indore was a regular visitor to these places and had few people from foreign land. As the state is situated in the mid its food has a lot of influence from the neighbouring state like Uttar Pradesh, Rajasthan and Delhi.

Lets take a tour of our menu this week

(SOME OF THE DISHES HERE MAY NOT HAVE BEEN TRIED BEFORE SO PLEASE FEEL FREE TO ASK US WITH ANYTHING YOU WOULD LIKE TO KNOW)
*We could do the Vegan option as well for the starters *
Starter:
Samosa Chaat (triangle shaped fried pastry with spiced potatoes served with curried dried green peas with green chilli coriander and mint sauce, and tamarind sauce (sweet and tangy) with a pinch of black salt cumin powder and dry mango powder. Different flavours are all brought in together in one dish with a bit of yoghurt and substitute used for Vegan)

Main:
ACHARI MURGH
(Chicken cooked in whole dry spices like Mustard seeds fennel seeds and nigella seeds with yoghurt and a bit of lemon and home blend spices) £18.50

OR
Main: BHOPALI CHICKEN REZALA
Chicken marinated in yoghurt and cooked in almond,ghee, coconut and fresh ginger and garlic £18.50

OR

Main: Lamb
Bhopali Gosht Korma (lamb cooked in Mustard oil with Star anise, cashew nuts with a bit of yoghurt and a home blend spices) £19.50

(PLEASE BE AWARE THAT THE VEGGIE OPTION WILL GET TWO ROUND TUBS OF DIFFERENT VEGGIE DISHES ONE WITH CURRY AND ONE *could be* DRY)

Main: Veggie £17.50
Bhopali mixed vegetable (vegetables cooked in spices along with cashew and coriander and mint along with milk and fresh cream Substitute used for Vegan.
AND
Dal Fry (yellow dal cooked in spices with mustard and cumin seeds with a bit of green chilli)

Dessert: Double ka meetha (Creamy dessert made with bread milk nuts and sugar £4.50 (Optional)

Poppadums and chutney £2 optional

Tawa Kulcha (indian flat bread) £2

Raita (thinly sliced carrots, cucumbers fresh mint and coriander mixed in honey yoghurt with a bit of red chilli powder)£3

Kachember Salad £2

All our 2 courses (Starter and Mains) comes with a box of rice

It’s a long read but surely worth reading before you try this dish
It is the story behind one of our Main dishes😊😋 DUM KA MURGH😋

This dish is a very traditional dish from Hyderbad which Telengana was part of just before 2014.. The word Dum means covered tight and slow cooked with just steam and Murgh is chicken😋..
Dum interestingly is a very unique method of cooking the dish which is sealed with the dough or even a foil to prevent the steam from escaping. The food steams in its own juices, absorbing the delicate flavours of the spices at the start😋

Traditionally the dish was made in a charcoal and a a huge bronze vessel for more flavour😋. Mughals has always been in favour of rich flavourful dishes and specially with the meaty dishes😋😊..and this dish is made with the whole chicken which was a Royal feast.
As the time changed and the dish came to laymen they started using the pieces of chicken but with the same flavour and aromas as the method of making them didn't change at all. Quite interestingly the meat and the chicken has always been adored by the Mughals and is believed to absorb more flavours. Even now there are very few dishes in India which is made with bone less chicken or even lamb/mutton/goat meat

Coming to the dish Dum ka Murgh.. Chicken thigh and drum stick on the bone is marinated in yoghurt along with nuts like almond, cashew paste and our own home blend spices for 18 hours and is slow cooked in steam to infuse the flavour within.. Which makes it more succulent and tender😋😋 we have use the dum method couple of times in our cooking and have been highly popular 😊

Monday Menu is here and that’s something exciting to keep us all going at the start of the week ☺

This week we are taking you all to a small and a very new state of India known as TELANGANA 😊. The state itself is not new but its part of our very own Hyderabad which is now a seperate state of India.
We've done the cuisine from Hyderabad, Andhra before which has a lots of influence of Mughlai dishes like biryani and so Telangana being part of Hyderabad for so long has a lot of influence from thier cuisine😋😋
They are known for the best spices and the most spicy food😋😋

Rice being the staple of the state there are unbelievably so many varieties of rice pilau that is cooked everyday in ones kitchen. But Telangana has a major love for the bread and have quite a few varieties of it..

TELANGANA is well known for its fresh spices used in the curry. Their curries are rich and thick gravy base. There is lot of variety of spices used such as Tamarind, Gongura leaves (Sorrel Leaves), red chilies.
The best part OF Telegana is its pickle, which is served with every dish and traditionally in a banana leaf😊😋
We are sure you are going to love this menu as much as you’ve loved the rest.

Starter: Gobi Pakora
Cauliflower florets mix in a batter of chickpea flour fresh curry leaves mixed with whole spices and bit of rice flour made into a batter and deep fried and served with chutney

Main: Dum ka Murgh £18.50
Chicken drum stick and thigh on the bone cooked in home blend spices along with coconut and poppy seeds made a rich gravy with almonds and yoghurt

OR
Main: Telangana style Natu Kodi kura £18.50
Tender chicken marinated in yoghurt and cooked in special kodi kura masala, fresh curry leaves 🍃 and red chillies 🌶️

OR

Main: Gonguru Mamsam ( Lamb Curry) £19.50
A spicy and flavourful lamb curry cooked in pickled Sorrel leaves and home blend spices

OR



Main: Veggie 1 Veg Hyderbadi Nizami Handi £17.50
Fresh cauliflower, carrots, beans, peas cooked in tomato based gravy with cashew paste and bit of cream
AND

Veggie 2 Spicy potatoes fry Telangana style potatoes chopped and cooked with onion dry fry with cumin seeds and mustard seeds and chilli powder
