Here we are with our bag of info's about our starter for the week๐Ÿ˜‹ PARIPPU VADA in simple words spiced lentil fitters.

In India there are so many variety of Daal (lentils)which is available, that it's hard to count literally and interestingly each daal has its own tastes, own medicinal properties and own variations. The lentils used in Northern India is much more warmer as it for cold weather and the one used in southern parts are cooler and lighter๐Ÿ˜‹๐Ÿ˜‹ to the tummy๐Ÿคค
In Southern parts of the country like Kerala doesn't use chickpea flour (besan) to make fritters as all the varieties of lentils binds together to make the fritters or pakoras. The most common lentil used in kerala is called Toor Daal which is one of the variety of yellow split daal which is available here. Toor daal is bit smoother to touch in its raw form and gets cooked in no time๐Ÿ˜‹ and very light to the tummy. These fritters are widely eaten as a street food in kerala especially in the train station with chai (tea)

Coming to the dish๐Ÿคค๐Ÿ˜‹.. This week's starter PARIPPU VADA is a very simple dish made out of soaked lentil blended and mixed with fresh curry leaves, green chillies, bit of ginger and garlic and a hint of asofetida. All combined together to make a fritters which is deep fried in vegetable oil๐Ÿ˜‹๐Ÿ˜‹.. Its is served perfect with coconut chutney๐Ÿคค

This week we are heading to the South of India..
One of the reason we revisit the place in our menu is because there are so many varieties of curries that one can make from one just region of India ๐Ÿ˜‹

Kerala resides in the southern most part of the coastal area of the country. Kerala has a multitude of dishes and is influenced by countries like south East Asia and some from Arabs. The Anglo Indianโ€™s populations influence some of the cuisines like breads. The food is also highly influenced by the religion in Kerala with beef being one the most popular dish, which is not common in other parts of the country. In south India there is a variety of lentils used even for the breakfast and rice is the staple meal but there are some very few regions in Kerala, which does a flat bread๐Ÿ˜‹๐Ÿ˜‹

In Keralan cuisine there is a lot of different spices used like curry leaves, whole black mustard, cinnamon and cardamom. As the state lies in the Malabar coastal area coconuts are available in umpteen numbers, which is why all the dishes are cooked in coconut oil. Some may be trying this cuisine for the first time and Iโ€™m sure you wont be disappointed.

Onion bhajji is thinly sliced red onion with chickpea flour batter with a sprinkle of Ajwain (spice) with fresh coriander is made into a small ball and is deep fried in vegetable oil

This week at Nimto we are making something different than you usual favourite but still the most delicious starter , its PYAZA KALLI PAKORA (Spring onion pakora)๐Ÿ˜‹ quite a popular favourite in South India ๐Ÿ‡ฎ๐Ÿ‡ณ

We use fresh spring onion ,fresh coriander and mint from our garden ๐Ÿ˜‹with a bit of cumin powder, red chilli powder and tumeric powder with a sprinkle of Ajwain which is mixed in besan ( chick pea flour ) and deep fried in vegetable oil served with chutney

Pakoras are the most loved snack in India and worldwide and interestingly it is always associated with a rainy day with a nice masala chai๐Ÿ˜‹๐Ÿ˜‹There are so many variations of Pakoras in each states and known by different names.

This classical dish has its own charm and is believed to keep the infection away especially tummy bugs during the monsoon season which also is a flu season in India. So the Pakoras fried in high temperatures were the best way to keep the bugs away (obviously with the best natural organic oil used then) So thats the reason why Pakoras are best served piping hot.
There are spices well known like fennel seeds, carom seeds, and coriander seeds that are mixed in the pakoras, which are believed to be the best spices for the digestion.

This week we are going to take you to the most beautiful state of India Maharashtra and a very popular city Mumbai (Bombay). The most loved and the most attracted place for a โ€œdream catcher โ€œ. Mumbai is the financial and commercial capital of India.
