I have had a lifelong love of flowers and have completed a Flower Arranging Course in Posy making, Basket Arrangement, Contemporary and Front-facing Arrangements & Orchid Arrangement. These make ideal gifts for any occasion, and can be made using any flowers, colours, and accessories, such as feathers or beads/crystals, to give it that personal touch! Grave Arrangements, Table Displays for all occasions (parties, Christmas, etc), & Church Arrangements are also available, tailored to meet your requirements. These can include seasonal items like candles, pine cones, & decorative spray. I love meeting Brides-to-be, either at my own home or I can come to theirs if it's more convenient, and work with them to create their special day flowers! Mini Easter Cheesecakes

Easy and delicious no-bake individual mini Easter cheesecakes with a biscuit base, Easter chocolate, and vanilla filling, topped with more goodness!

Ingredients:
Biscuit Base:

200 grams digestives
100 grams unsalted butter (melted)
Cheesecake Filling:

300 grams full-fat soft cream cheese/mascarpone (room temp)
50 grams icing sugar (or caster sugar)
1 teaspoon vanilla extract
150 ml double cream
150 grams Easter chocolates, crushed
Decoration:

125 ml double cream
1 tablespoon icing sugar
Sprinkles/grated chocolate
150 grams Easter chocolates
Instructions:
For the Biscuit Bases:

Blitz the biscuits in a food processor and mix them with the melted butter.
If lining the mini cake tin, do so now. Portion the biscuit mixture between the 12 mini cake molds and press down firmly with a spoon.
For the Cheesecake Filling:

In a large bowl, whisk together the full-fat soft cream cheese, icing sugar, and vanilla extract until smooth.
Whip the double cream separately in another bowl to stiff peaks, then fold it through the cream cheese mixture. Alternatively, pour the double cream into the cheesecake mixture and whip it all together until thick.
Fold through the crushed Easter chocolates.
Pour/spoon the mixture between the 12 cheesecakes and smooth over.
Set the cheesecakes in the fridge for at least 3-4 hours or the freezer for 2-3 hours.
For the Decoration:

Carefully remove the cheesecakes from the tin.
Whip up the double cream and icing sugar until thick. Pipe onto your cheesecakes.
Sprinkle over some sprinkles and grated chocolate and add some Easter chocolates.
Notes:

These will last in the fridge for 3 days once made.
You can use small ramekins or glasses instead of the mini cake mold.
Cupcake cases can be used, but they can be difficult to remove the cheesecakes from.
Recommended kitchen tools: mini cake mold, food processor, electric hand whisk.
You can use any Easter chocolates you prefer in the cheesecakes. Mix and match to your liking!
