I am often asked what to use as a plant-based gelatine alternative for makings tarts, jellies and canna cotta.

Here are my recommendations as traditionally gelatine is an animal by product made using the scraps, bones, skin and cartilage to create stick gel (yuk).

This is totally unnecessary as there are several good plant-based alternatives which works just as well.

My favourite is Agar Agar which is a substance made from cooked and compressed seaweed and usually comes in flakes and powder form. It sets in an hour and doesn't need to be chilled to help the setting process, making it quick and convenient to use. Simply dissolve 1 tsp of powder or 1 tbsp of flakes in every cup of liquid you wish to set.

Carrageenan, which is also made from a type of seaweed, is used to make carrageenan powder that can be used as a binder, thickener and gelling agent. Dissolve 1.5g of powder in every 100ml of cold liquid and heat, but DON'T boil. Then leave to set at room temperature.

GROW YOUR OWN

I am so fortunate to have the space to be able to grow my own vegetables and herbs and this year, I have been rewarded with the fruits of my labour, time, love and a lot of patience.

I haven't always got it right and I am still learning however this year, I have stepped outside of my comfort zone and really gone for it.

Here is some of what I have planted and reaped the rewards from:

- Tomatoes (cherry, plum and vine)
- Herbs: lemongrass, coriander, mint, parsley
- Cucumbers (they have flowered and I'm still waiting for them to fruit)
- Green beans
- Strawberries
- Basil (labour of love as from seed they do take a while so patience is needed for sure 😁
- Spinach
- Rocket

A friend said to me the other day how lucky I am to have a garden to do all this in however, as I said to her, even if you live in an apartment and have a balcony or even just a window sill, you can start small by growing your own herbs in small pots/trays and still reap the benefits.

Herbs are a great addition to your savoury dishes as well as best enjoyed to flavour your water with either citrus fruits or berries (rosemary, basil, mint all work well with blueberries, raspberries, lime etc. etc) and this keeps you hydrated throughout the warm Summer days.

So proud of my green fingers this year which I am starting to reap the benefits from now and for weeks to come.

- Cherry tomatoes
- Green beans
- Rosemary and others herbs (parsley, coriander, mint)
- Lemongrass that I ise regularly for my Katsu curries which is my favourite dish the moment
- Cumcumbers which are starting to flower before they fruit 🙏

An amazing day out in London on a rare free Saturday starting off with vegan brunch Dishoom King's Cross which I recommend everyone to try.

I enjoyed their vegan brunch special which included black pudding which was in fact delicious with an oat chai followed up by a matinee show of MJ the Musical which was one of the best shows I have seen if not THE best show!! 🎭

What a fabulous day with beautiful friends and the day is not over in yet.

Heading over to Shoreditch for the evening. 👌🌱

Love that no matter where you travel in the 🌍 we can always keep it Vegan 🥑 😋

I hope this message finds you well and thriving!

You might have noticed I've been a bit quiet over the past few weeks and I wanted to reach out and let you know that I'm still here, dedicated to bringing you the best in plant-based catering, personal chef services and nutrition guidance. 🌱✨
You may know I took a little break to Tenerife and had a fabulous time in a wonderful villa which included personal chef services, which I thoroughly enjoyed and was spoilt rotten not having to cook myself and then upon our return, we have been recovering with covid and upon recovery, have been thrown back into full swing into our busy Summer schedule of private catering (quick summary) 🌼

Taking some time to recharge and gather fresh inspiration has been so valuable.

It looks like Summer is finally here (in the UK) and what better way to enjoy it then getting outside in the warm fresh air and taking in your local surroundings.

Here in Bedford, we have a few beautiful spots to enjoy and here are my 2 favourite places I love to walk, for exercise and wellbeing, as well as to enjoy the stunning scenery.

I know we are mid way though July already however it has been a bit of a whirlwind month!

Time goes so fast that one of the only ways I can recall what I didn’t through pictures so here goes!

Here is what I’ve been up to:

☀️End of June saw the beginning of sunshine here in the UK although July has left a lot to be desired weather wise
🏊‍♀️ Taking some time out for myself and swimming is one of activities I love
🥗Catering for a lovely group of yoga retreaters. Love serving up healthy and nutritious dishes yet still full of flavour
🏖️ Family holiday to Tenerife for a well deserved break for all which started off well but ended up 😷 with Covid for ALL 😩
🤧Taking some time out for recovery after what seemed like a heavy cold and loss of smell and taste however after only a few days, I have recovered well as has my 84 year old mum which I purely put down to a plant based diet and lots of nutritious supplements which put us in good stead
💻 Now back to business and catching up on coaching and emails and more catering over the Summer months

There is a famous quote which I love:

“Do what you love, and you’ll never work another day in your life.” Amen to that 🙏 ❤️

With all the recent news on the Ecoli spread here in the UK, it has been confirmed that the spread is from shop bought sandwiches that have ‘lettuce’ in them, therefore lettuce being the root cause.

My theory is that, recently, when buying any type of lettuce I have noticed a significant number of flies and insects in between the leaves as well as a lot of earth therefore my advise is to WASH the lettuce (as well as all fruits and vegetables) in a bowl of cold water and a few tbsp of apple cider vinegar to kill any germs and bacteria.

In a world where a lot of our products are sprayed with toxins to keep them fresh for longer, we need to take our own precautions.

Happy Monday everyone 🌼

Last week I went on a juicing workshop and was re-inspired to get back into juicing.

Although I enjoy a green smoothie pretty much every morning, I wanted to take it a step further and incorporate a fresh juice once a day to increase the amount of natural nutrition I already enjoy on my plant-based diet.

🥞✨ Weekend Pancake Brunch Recipe! ✨🥞

Happy weekend, everyone! What better way to start your Saturday or Sunday morning than with a stack of fluffy, delicious pancakes?

Whether you're treating yourself or hosting a cozy brunch, these pancakes are sure to impress. 🌟

🍌🌿 Vegan Banana Pancakes 🌿🍌 Makes 8 (depending on size)

Ingredients:

1 cup self-raising/all-purpose flour (gluten free all purpose flour works well)
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 cup almond milk (or any plant-based milk)
1 tbsp apple cider vinegar
1 ripe banana, mashed
1 tsp vanilla extract
2 tbsp coconut oil (melted) or vegetable oil

Toppings:
Fresh berries
Sliced banana
Maple syrup
Chopped nuts
Vegan yogurt
Or try scrambled tofu, sautéed tomatoes and sliced avocado for a savoury option

Instructions:

👩‍🍳In a small bowl, mix the almond milk and apple cider vinegar. Let it sit for a few minutes to create vegan buttermilk.
👩‍🍳In a large bowl, whisk together the flour, sugar, baking powder, and salt.
👩‍🍳Add the mashed banana, vanilla extract, and melted coconut oil to the vegan buttermilk. Mix well.
👩‍🍳Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
👩‍🍳Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or cooking spray.
👩‍🍳Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
Serve your pancakes warm with your favorite toppings.
Invite friends or family, brew some coffee, and enjoy a relaxing brunch with these scrumptious vegan pancakes.

Let's kickstart the week with a delicious and nutritious plant-based meal.

Going meat-free once a week is not only great for your health but also for our planet.

Today, I'm sharing a quick and easy recipe that's perfect for busy days.

Give it a try and let me know how you like it!

🌿 Quick and Easy Chickpea and Spinach Curry 🌿 Serves 4

Ingredients:

1 tbsp olive oil
1/2 cup white cabbage, finely sliced
1 tsp truffle oil
1-inch piece of ginger, grated
1 tsp cumin seeds
1 tsp ground turmeric
1 tsp ground coriander
1 can chopped tomatoes
1 can coconut milk
1 can chickpeas, drained and rinsed
4 cups fresh spinach
Salt and pepper to taste
Fresh coriander for garnish (optional)
Add sweet potato or butternut squash for added flavour & texture (2 cups, diced)

Cooked rice or naan, to serve

Instructions:

🌱Heat the olive oil in a large pan over medium heat. Add the cabbage and cook until softened, about 5 minutes.
🌱Stir in the ginger, and cumin seeds. Cook for another 2 minutes until fragrant.
🌱Add the turmeric and ground coriander, stirring to coat the cabbage and spices evenly.
🌱Pour in the chopped tomatoes and coconut milk, bringing the mixture to a simmer.
🌱Add the chickpeas and let it cook for 10 minutes, allowing the flavours to meld together.
🌱Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
🌱Serve hot, garnished with fresh cilantro if desired, over a bed of rice or with warm naan.

This curry is packed with plant-based protein, fibre, and vitamins, making it a perfect meal to nourish your body and soul. Plus, it's ready in under 30 minutes! 🌟

Here are some fantastic benefits of embracing a plant-based lifestyle:
